Sushi / Omakase Chef

Restaurant: A Bridgeton Property 
Location: New York, NY   West Village neighborhood
Position: Full-Time
Compensation: $80k to $95K

Overview

We are seeking an experienced Sushi / Omakase Chef to join our New York City team. This role is ideal for a chef with strong traditional technique, exceptional knife skills, and a polished counter presence. The position focuses on delivering a refined omakase experience with an emphasis on quality, consistency, and guest engagement.  Experience in opening a restaurant is also ideal.

Responsibilities
  • Execute nightly omakase service and à la carte sushi with precision and consistency
  • Perform full fish breakdown, curing, aging, and preparation
  • Prepare and season sushi rice to exacting standards
  • Maintain strict cleanliness, organization, and NYC Department of Health compliance
  • Provide professional, knowledgeable guest interaction at the counter
  • Assist with daily fish selection, sourcing, and seasonal menu development
Requirements
  • 3–5+ years professional sushi experience (NYC or high-end omakase preferred)
  • Advanced knife skills and fish butchery expertise
  • Strong knowledge of raw fish handling and food safety standards
  • Ability to work cleanly and efficiently under high-volume service
  • Availability for evenings, weekends, and holidays
  • Must have a NYC Food Handlers Certificate issued within the past three years.
Preferred
  • Experience in NYC fine-dining or omakase counters
  • Japanese culinary training or apprenticeship
  • Leadership or mentoring experience

Compensation Details

Compensation: Salary ($80,000.00 - $95,000.00)
