We are a soon-to-open Japanese home-style restaurant in Long Island City’s busiest area, serving comfort home-style dishes.
Position Overview
We are seeking an experienced Sushi Chef to join our opening team. The ideal candidate has strong technical skills in sushi preparation from start to finish and a solid understanding of fundamental Japanese home-style dishes. This role is hands-on and requires consistency, attention to detail, and teamwork in a fast-paced kitchen environment.
Responsibilities

Prepare sushi from start to finish, including rice preparation, fish handling, cutting, and presentation

Execute fundamental sushi styles (nigiri, sashimi, maki, etc.) with consistency and precision

Prepare and assist with traditional Japanese home-style dishes (washoku)

Maintain high standards of food quality, cleanliness, and organization

Follow food safety and sanitation guidelines at all times

Work closely with kitchen staff to ensure smooth service and timely execution

Contribute to menu execution and opening kitchen setup as needed
Qualifications

Previous experience working as a sushi chef or Itamae in Japanese restaurants (required)

Strong knowledge of sushi fundamentals and Japanese cooking techniques

Familiarity with traditional Japanese ingredients and seasonings

Ability to work full-time, including weekends and evenings

Strong work ethic, reliability, and attention to detail
Preferred (Plus) Qualifications

Ability to speak Japanese, Mandarin, or other Asian languages

Understanding or appreciation of Japanese and Asian food culture

Experience working in high-volume or omakase-style settings

Compensation Details
Compensation: Salary/Hourly ($50,000.00 - $70,000.00) plus tips
