Il Buco Alimenteri & Vineria Pastry Department, a unique establishment that takes pride in its naturally leavened products and emphasizes organic and locally sourced ingredients, is seeking passionate pastry cook.
Pastry cooks provide support to Executive Chef, Head Baker, and Pastry Chef. They are responsible for proper food storage, cleaning the preparation area, and making sure utensils and trays are clean and ready for use.
If you have an organic understanding of pastry, fermentation, and laminated doughs ( breakfast pastries, crostatas, muffins, cookies, croissants, etc.) and are looking to gain practical skills, this is an excellent opportunity to assist in:
Responsibilities include:
- Preparing ingredients for cooking - washing, measuring, slicing, peeling, roasting, and caramelizing.
- Setting up and breaking down the Pastry station each shift.
- Executing pastries with the highest standard of care and attention
- Storing food safely.
- Cleaning and maintaining the kitchen thoroughly according to food safety standards.
- Assisting with baking under the direction of the department
The Ideal Pastry Assistant:
- Over One year of experience
- Has passion for baking, pastries, ideology, and direction
- Understand DOH and OSHA standards and regulations
- Meticulous attention to detail and a sense of urgency: Scaling, mixing, portioning, shaping, laminating, and baking a variety of dough; Knowledge and understanding of fermentation;
- Clear communication, time management, and organization skills-recognize the importance of professionalism and respect and exemplify this in interactions with workers alike
- Responsible work ethic, with a focus on working independently and multi-tasking.
- Full-time, early morning flexibility. They must start work early to prepare baked goods for morning trade.
- Strong communication skills and professional working proficiency in English are a plus.
Physical Requirements
- Ability to lift up to 25 lbs frequently and up to 50 lbs occasionally.
- Standing for 4 to 8 hours per shift with occasional bending and reaching.
- Ability to work in a bakery environment with varying temperatures.
