From Lucie is a cozy East Village bakery inspired by our founder, Lucie’s childhood on a farm in the South of France. We are known for our seasonally inspired cakes, decorated with organic flowers, dried fruits, and house-made jams and curds, as well our delicious cookies and pastries.

We are looking for a full-time Bakery Manager to lead our back of house team at the retail bakery. For the first phase, you will work alongside our current Bakery Manager, sharing responsibilities and learning our systems, standards, and style. As we open our new commissary kitchen and shift more production off-site, this role will grow into being the primary Bakery Manager at the East Village bakery.

This is a hands-on role for someone who loves both beautiful cake work and calm, organized leadership in a busy kitchen.

Responsibilities

  • Lead and support the back of house team at the bakery

    • Oversee bakers on shift

    • Train new bakers in From Lucie’s aesthetic, structure, and standards

    • Give clear direction on busy days and during holidays

  • Own daily finishing and bakery pars

    • Review preorders and custom cakes and help build daily production and finishing plans

    • Set and adjust pars for the bakery based on sales patterns and upcoming orders

    • Keep a close eye on special orders so everything is ready on time

  • Manage inventory, ordering, and flowers

    • Track and order finishing ingredients, décor elements, and smallwares for the bakery

    • Coordinate weekly flower runs and manage flower usage for cakes

    • Work to minimize waste while protecting quality and presentation

  • Partner with the cafe and, later, the commissary

    • Communicate with the cafe manager so front and back of house stay in sync throughout the day

    • Once the commissary opens, work with the commissary manager on pars and deliveries so the right components arrive when needed

  • Maintain standards and kitchen culture

    • Ensure DOH compliance, cleanliness, and organization in the kitchen

    • Help set and maintain systems that keep the bakery running smoothly

    • Foster a positive, respectful, and inclusive team culture

Requirements

  • Professional experience baking and decorating cakes in a commercial bakery or pastry kitchen (required)

  • Prior leadership or supervisory experience in a bakery, pastry, or production kitchen

  • Strong communication and organization skills, with the ability to plan the day and give clear instructions

  • Comfortable managing pars, reading order reports, and communicating needs to another kitchen or team

  • Ability to lift up to 50 lbs and work efficiently in a small, busy space

  • Available to work weekends and holidays, including peak periods such as Mother’s Day, Thanksgiving, and Christmas

  • Professional references required

With flavors rotating based on baker Lucie Franc de Ferriere's farmers market discoveries, and each meticulously curated by her own hand, From Lucie provides individualized edible splendor.

Finding inspiration in the unexpected combination of seasonal ingredients, From Lucie is born out of her environment’s flavors. Icing is used in lieu of fondant to extract the richest flavors from elderflowers to rosemary. Finally, all cakes are topped with organic and locally grown flowers, whose stems would otherwise be too short for a florist’s use. These subtle combinations are sumptuous while never excessively sweet.

Lucie began From Lucie as a love story with the French countryside, where she was raised. Her baking career begins helping her mother in their Bordeaux kitchen making cakes for the guests at the bnb the family ran on their vineyard’s property. Drawing inspiration from the earthy flavors and high-quality ingredients of the family farm, From Lucie’s cakes are infused with provinciel lifestyle and the ease and warmth of home baking.

Between her youth and beginning the company in 2020, Lucie studied art history in the UK and worked in art galleries in New York. She ventured to return home, not physically, but in the pursuit of baking, taking with her a curated palette and inventiveness found in both art and nature.

Her orders are always baked by Lucie and her team in her East Village kitchen, with each cake composed according to an ever-changing bouquet.
