Valhalla is Chef Stephen Gillanders' unique dining concept that marks his most significant work to date.
Located in Wicker Park- Valhalla captures and culminates the best of Gillanders’ career and distills it into an experience unlike any other.
Inspired by Norse mythology, the name Valhalla describes a heavenly, great hall where heroes partake in a grand feast. Given the restaurant’s location overlooking the main floor of the Market, the name’s symbolism takes a literal context, transcending the experience as a whole.
The completely open kitchen, large chef’s counter, and tablecloth-adorned dining space will showcase exceptional culinary and hospitality talent, while creating an intimate, personalized experience to interact with guests.
Valhalla’s cuisine will consist of a a chef’s tasting menu as well as balanced à la carte menu.
Beverage program will showcase 3 different tiers of wine pairings, craft coctails, and selection of highly allocated spirits.
As a Chef de Partie you will be required to effortlessly multi-task, possess great communication skills, and enjoy the learning aspects of food and beverage.
Responsibilities include:
- Working under the direction of the chefs and completing assigned tasks daily.
- Following prep lists and recipes.
- Learning and executing specific dishes on their prescribed station.
- Comply with all health department requirements of food safety and staff hygiene including but not exclusive to labeling, time, and temperature.
- Actively participates in the positive relationship between FOH and BOH teams by maintaining a steady stream of communication with all staff.
- Follows safety and emergency procedures to protect staff, guests, and property.
- Reports any maintenance deficiencies immediately to appropriate personnel.
- Maintains thorough understanding of industry and stays abreast of industry trends.
- Demonstrates courteous and cooperative behavior when interacting with public and staff; acts in a manner that promotes a harmonious and effective workplace environment.
- Predominantly working, the PM shifts through the entirety of the service.
