Leonard’s Palazzo, a premier event venue renowned for its exceptional service and elegance, is seeking a dynamic, highly motivated, and detail-oriented Banquet Prep Cook to join our team. The Banquet Prep Cook is responsible for preparing high-quality food in a high-volume, fast-paced culinary environment. The position requires strict adherence to standardized recipes, food safety procedures, and production schedules. The individual will demonstrate strong culinary fundamentals, knife skills, and plate design.
Key Responsibilities:
- Follow standardized recipes and production guidelines to ensure consistency and quality.
- Prepare salads, cold platters, vegetable platters, desert displays, and other foundational elements of the menu.
- Execute large-batch cooking for banquets using appropriate techniques (e.g., slicing dicing, frying, carving, etc.)
- Utilize bag and chill systems for safe food preparation and storage.
- Receive, inspect, and store food deliveries in compliance with safety and quality standards.
- Maintain cleanliness, organization, and proper labeling in all storage areas including walk-ins, dry storage, and prep areas.
- Ensure all food is prepared and stored in accordance with HACCP and DOH guidelines.
- Work collaboratively with kitchen staff and front-of-house teams to meet production timelines and event needs.
- Assist in the setup, breakdown, and cleaning of workstations and production areas.
- Demonstrate effective time management and prioritization to meet tight production schedules.
- Additional tasks as provided by the Executive Chef and Garde Manger.
Position Requirements:
- Proficient in knife skills, culinary design , and classical cooking techniques.
- Strong knowledge of food safety standards and kitchen sanitation practices.
- Ability to follow recipes and instructions accurately and consistently.
- Excellent organizational and time management skills.
- Ability to multitask.

- Ability to work as part of a team and demonstrate initiative.
- Must be able to organize, plan, and prioritize work.
- Capable of lifting up to 50 lbs and standing for extended periods.
