JOB DESCRIPTION: SOUS CHEF FOR ISLA RESTAURANT (WE SHALL HOSPITALITY)

POSITION SUMMARY:

We are looking for a Sous Chef to join our culinary leadership team. This position requires, a culinary professional with a proven track record in BOH labour, food cost, and inventory management. As well as verified people and time management skills in upscale dining environment. A tangible knowledge of high-level cooking techniques, ingredients and processes. The ideal candidate not only has the desire but the ability to execute food and service at a very high level of consistency, speed and presentation. References are mandatory.

KEY RESPONSIBILITIES:

  • 3 years minimum experience as a Sous Chef in high-end, fine dining, or luxury culinary settings, knowledge of prefixed menu’s, catering and BEO’s
  • Mastery of all line stations-including pastry
  • Deep knowledge in classical and modern cooking techniques, including but not limited to:
  • Open flame cooking and smoking techniques with wood and coal
  • Butchering of proteins including fresh seafood
  • Sous vide cooking
  • Fermentation
  • Molecular gastronomy
  • Plating and presentation techniques
  • Pastry arts and dough lamination techniques
  • Strong organizational, leadership, and multitasking skills to thrive under pressure
  • Experience with modern kitchen management tools and POS systems (preferred experience must include Toast, & Margin Edge.
  • Skilled in cost analysis, portion control, waste reduction, and inventory management software
  • Expertise in developing training modules for technical skills, sanitation, and safety procedures
  • Proficiency with advanced culinary equipment: immersion circulators, rotary evaporators, centrifuges, blow torches, immersion blenders, dehydrators, and rotary slicers
  • Knowledge of advanced sanitation practices and HACCP standards, ensuring compliance and safety
