What You Will Do:
As one of the Assistant Kitchen Managers at Terra - Eat Better Food, you will be hands-on in every part of ensuring a smooth kitchen operation, executing our high standards of
quality with a precise focus on consistency. Working and communicating directly with
the Executive Kitchen Manager, you will play a leading role in the Back of House and
coach the team with a Food First mentality. You will set the tone of commitment in your
team in Quality, Consistency, Order Accuracy, Cleanliness, Personnel Development,
Accountability, and Inspirational Leadership.
Key Responsibilities
Culinary Execution & Food Quality
● Monitor, Address and Communicate what’s happening in the restaurant by
performing regular full restaurant walkthroughs, reviewing our system reports and
coaching the teams on how to run at a high level.
● Ensure all menu items meet Terra’s standards for taste, texture, presentation,
and portioning.
● Maintain strict adherence to approved recipes, preparation methods, and brand
specifications.
● Conduct daily routines to verify quality, freshness, and readiness before every
service.
● Maintain & protect our exceptional food quality, cleanliness, and safety standards
in compliance with NYC health regulations.
● Manage inventory and ordering to keep a control on costs to meet financial
targets.
● Apply and enforce operational procedures to optimize efficiency, quality and a
positive work environment for our teams.
● Assist in the development of our teams, through individualized training, providing
feedback, taking an active interest in the progression of your team, to foster a
positive team culture.
● Conduct teams across multiple stations, keeping communication clear and the
system organized.
● Collaborate with the Executive Kitchen Manager supporting and enforcing clear
expectations for our teams and ensure quality and service above all.
● Oversee training to ensure strong technical and cultural alignment.
● Promote a respectful, safe, and collaborative work environment aligned with
Terra’s core values.
● Lead DOH inspections and internal audits.
● Ensure proper food handling, labeling, storage, and rotation practices at all times.
Communication & Collaboration
● Communicate clearly and proactively with the Executive Kitchen Manager & the
Executive General Manager
● Share feedback from the kitchen and offer ideas for continuous improvement.
Qualifications
● Minimum 1–3 years of culinary leadership experience (Head Chef, Sous Chef,
or Assistant Kitchen Manager) in a QSR, fast-casual, or high-volume restaurant.
● Proven ability to lead and motivate diverse kitchen teams.
● Strong working knowledge of food safety protocols and DOH compliance.
● Hands-on leader with a “lead by example” approach to teamwork and service.
● Culinary degree or equivalent practical experience preferred.
● New York City Food Handlers Card required.
