We are a two story wine bar with a uniquely aggressive bar program. Cocktails and spirit service are equally important and will be acknowledged at the same level as the wine program.
Proper business practice and continual education in wine, spirits, technique and service will be the basis of every bar position. No shortcuts will be explored through the hands-on training available through the positions available. The positions available will be filled by the future stars of our industry. Those candidates will be exposed to a professional environment that is focused on exceeding the standards of the current industry. Introductory level bartenders are should recognize that this a unique setting in which they can learn from some of the best personalities in our business. The energy of this team will be cohesive and supportive. Everyone's individual success relies on the success of the unit as a whole.
Who we are: A group of managers that have created a food and beverage program built on humility, integrity, and intense passions for the hospitality industry. The Executive Chef has focused the food around simple and clean flavors executed with high technique. Think Italy, Spain, France, and the Mediterranean, using as many local and American products as possible, but celebrating other countries when appropriate. The plates are meant to be shared, all the ingredients are well sourced (less there is on a plate, less there is to hide behind), and there will be a strong cheese and charcuterie program. We are not, however, like any other wine bar you know. The food, cocktails, and wine program are all executed at a very high standard.

Lunatic, The Lover and The Poet is
located on the north side of Randolph Street
just west of the 90/94 expressway. The
building was used as a hardware store and a
warehouse over the last 30 years. It features
beautiful blond bricks that will be
sandblasted, sealed and left exposed. We will
manage the natural strength of the building
with soft lighting, a clean sound system and
comfortable seating arrangements.
