About The Parlour

At The Parlour, part of Brooklyn High Low (BKHL), we transform the ritual of afternoon tea into a refined, modern experience. Each three-tier stand is a showcase of sandwiches, scones, and desserts — plated with balance, beauty, and intention.

We’re seeking a Garde Manger / Plating Chef who thrives in a fast-paced but well-supported kitchen. Our weekends are lively and precise, not chaotic — ideal for someone who takes pride in presentation and enjoys working in a setting built on rhythm, teamwork, and elegance.

The Role

As our Plating Chef, you’ll assemble and present every afternoon tea service to BKHL’s signature standards. You’ll create the visual centerpiece of our guests’ experience — the tier that captures attention and elevates the service.

You’ll work closely with our prep and front-of-house teams to ensure seamless service, maintaining focus and artistry even in the busiest moments.

Key Responsibilities

• Assemble and plate menu items following BKHL’s plating standards and portioning guides

• Maintain a clean, efficient, and organized plating station

• Coordinate with service staff to ensure timely and accurate presentation

• Adhere to strict food safety and hygiene practices

• Assist with light prep, setup, and breakdown before and after service

• Suggest refinements that improve plating flow and presentation quality

Who You Are

• Experienced as a Garde Manger, Cold Station Cook, or Pastry Assistant

• Thrives in structured high-volume service with a strong sense of timing and teamwork

• Artistic eye for balance, texture, and composition

• Communicative, dependable, and detail-oriented

• Available Friday through Sunday — perfect for someone seeking a reliable second job or weekend-only schedule

• Professional in demeanor, punctual, and takes pride in craftsmanship

Qualifications

• 1 year of professional kitchen experience (restaurant, hotel, or catering preferred)

• NYC Food Handler’s License preferred

• High school diploma or equivalent

• Excellent communication and station management skills

Compensation

$18/hour + 5% of daily tips
Potential to earn up to $23/hour with tips and performance bonus
Plating Bonus awarded after 3 months of consistent, high-quality work

Part of Brooklyn High Low

The name Brooklyn High Low refers to our take on two distinct English traditions: Low Tea and High Tea.

Low Tea emerged in the mid-1830s as a light afternoon snack to tide the upper class over until dinner, which was enjoyed at low tables arranged with light sandwiches, petit fours and elegant china. High Tea, on the other hand, was traditionally a full meal meant to replenish laborers upon their return home from their physically demanding jobs.

Brooklyn High Low pulls from both traditions to offer a classic tearoom service, Brooklyn-style, through three tea experiences. The Brooklyn, Vanderbilt, and Heights teas offer a range of savory bites, baked goods and yummy sweets created by house chef, Juan Carlos Jimenez. Our sitting room, outfitted with low tables, comfortable velvet chairs, and vintage décor, is an oasis of cozy and calm—the perfect respite from everything outside of the tearoom’s doors.
