Role Summary
We’re looking for a Lead Pastry Cook to take ownership of daily pastry operations within our small but fast-paced kitchen. This is a hands-on leadership role ideal for an experienced pastry professional who thrives on both artistry and organization — balancing production excellence with mentorship and communication in a collaborative environment.
Responsibilities & Expectations
- Lead and participate in daily pastry production, ensuring consistency, timing, and quality across all items
- Delegate and supervise team tasks, acting as the primary point of contact during shifts and ensuring everyone stays on track
- Create and maintain weekly production schedules for the pastry department and staff
- Manage staff scheduling, ensuring proper coverage for morning and afternoon shifts
- Maintain clear communication with the Lead Baker and ownership, including daily updates, shift reports, and alignment on goals and schedules
- Keep all recipes current and accurately documented — recipes must always be updated and stored in the designated recipe folder and on the bakery computer
- Oversee ingredient inventory, manage ordering, and track usage to minimize waste
- Ensure all baking processes meet recipe and quality standards, conducting quality checks and managing real-time production issues
- Maintain a clean, organized, and safe work environment, upholding health codes and bakery sanitation policies
- Mentor and support bakers and pastry cooks, fostering a positive team culture and helping develop skills and consistency
- Identify and communicate opportunities for improvement in workflow, product quality, and team performance
Skills & Requirements
- Minimum 5+ years of professional experience in pastry, bread, or related baking fields (required)
- Formal education in pastry (preferred, but not required)
- Proven ability to manage pastry staff scheduling, production flow, and communication between departments
- Strong knowledge of cakes, tarts, cookies, and finishing/presentation techniques
- Experience with inventory management, vendor coordination, and quality control
- Ability to work quickly and efficiently in a fast-paced, physically demanding environment
- Comfortable working independently and as part of a team
- Availability to work holidays and weekends
- Ability to stand for a full shift and lift 50+ lbs as needed
- Must be 18 years or older and authorized to work in the U.S.
- Familiarity with Swedish-style pastries is a plus — but not required

Shifts Needed:
- The position opening is full time (40 hours per week).
- Shift starting between 4am - 6am
- Occasional overnight production or prep shifts may be required, depending on seasonal or special-order needs
- 2 consecutive days off
- Anticipated immediate start date
