Tachi is a modern omakase concept inspired by Tokyo’s standing sushi bars. We combine the precision and intimacy of traditional sushi with the energy of New York City. Our menu features high-quality ingredients, a concise omakase offering, and fast, elevated service.

We’re looking for a Sushi Apprentice / Kitchen Assistant to join our opening team. This is a great opportunity for someone who wants to grow in a professional sushi environment and learn directly under one of New York’s most talented emerging sushi chefs.

About Our Chef
Victor Chen, originally from China and raised in Brooklyn, began his sushi journey at New York Sushi Ko, where he was first introduced to the Edomae tradition. Over the past 15 years, he has worked in both intimate, detail-driven counters and large international hospitality groups, including Kintsugi and Aman Nama. His philosophy blends Edomae fundamentals with restraint, seasonality, and storytelling through sushi.

As part of our team, you’ll be learning directly from Chef Victor, gaining hands-on exposure to the craft and philosophy behind modern Edomae sushi.

Responsibilities

  • Assist chefs with daily prep (rice, fish breakdown, garnish, sauces, etc.)
  • Support sushi counter operations during service
  • Manage takeout and packaging setup for omakase boxes
  • Maintain cleanliness and organization of the kitchen and prep areas
  • Follow DOH and food safety protocols
  • Receive and organize deliveries
  • Contribute to smooth communication between front- and back-of-house

Requirements

  • Some kitchen experience preferred; sushi experience a plus
  • Strong attention to detail and cleanliness
  • Team-oriented, reliable, and eager to learn
  • Ability to work in a fast-paced environment
  • Flexible schedule including nights and weekends

Compensation Details

Compensation: Hourly ($20.00 - $25.00)
