Job Details
Cornerstone Restaurant Group (CRG), based in Fulton Market, is seeking a talented Lead Baking and Pastry Cook for CRG’s newest restaurant, Dimmi Dimmi, nestled in the Lincoln Park neighborhood. The restaurant features 75 seats inside, with an additional 40 seats outside during patio season next summer. 
 
With Dimmi Dimmi, CRG is reimagining the iconic neighborhood Italian spot with bold red-sauce staples, classic cocktails, and a warm, buzzing vibe. It’s where timeless tradition meets modern energy, brought to life with heartfelt hospitality and moments made to share. 
 
As Lead Baking and Pastry Cook, you’ll collaborate with an exceptional culinary team led by Executive Chef Matthew Eckfeld, who honed his expertise in Italian cuisine at New York’s celebrated Carbone and other iconic Major Food Group restaurants. Our pastry program is guided by consultant Casey Doody, a French Pastry School alum and former Director of Pastry at the renowned Boka Group.

The following reflects management’s definition of essential functions for the Baking & Pastry position but does not restrict the tasks that may be assigned. Management may assign or reassign duties and responsibilities to this job at any time due to reasonable accommodation or for other reasons.  

  • Responsible for executing bread making (focaccia, pizza doughs).
  • Collaborate with the Executive Chef to execute Italian-inspired dessert menus, including pastries, cakes, and plated desserts.  
  • Monitor and maintain the quality of all ingredients and finished products, making sure that they meet established standards for flavor, texture, and appearance.  
  • Manage the pastry kitchen's inventory, conduct regular stock checks.  
  • Maintain a clean, organized, and fully stocked pastry station, ensuring all equipment and tools are in good working order.  
  • Adhere to and enforce all food safety, sanitation, and hygiene regulations, maintaining a compliant and safe kitchen environment.  
  • Full time, 7:30am - 3:30pm

Job Requirements
  • Proven experience as a pastry cook.
  • Passion for and knowledge of Italian breads and desserts.
  • Strong organizational and time-management skills. 
  • Creativity and a good eye for detail, with a focus on presentation. 
  • Ability to work efficiently and calmly under pressure. 
  • Knowledge of food safety and sanitation standards. 
  • Ability to read and follow recipes precisely. 
Physical Requirements
  • Ability to lift and carry objects weighing up to 20 pounds on a regular basis.
  • Frequent long periods of standing and walking are expected during the workday.
  • Ability to reach for objects and stoop or bend as needed to perform job duties.
  • This position may involve visual and auditory tasks, including the ability to see and hear adequately to perform job functions.  
  • Able to go up and down stairs frequently, carrying up to 25 pounds. 

Compensation Details

Compensation: Hourly ($20.00 - $25.00)
