Zoller’s Fine Foods is an elevated neighborhood sandwich shop and café known for high-quality ingredients, creative menu items, and warm hospitality. We are seeking a Kitchen Manager / Sous Chef to join our growing team. The Sous Chef will work closely with the Chef/Owner to oversee kitchen operations, maintain high culinary standards, and ensure smooth day-to-day execution of food preparation and service.
This is a hands-on position requiring leadership ability, strong cooking chops, and excellent communication skills.Key Responsibilities
- Culinary Execution
- Prepare, cook, and plate menu items to Zoller’s standards of consistency, flavor, and presentation.
- Assist with recipe development, menu specials, and seasonal items.
- Maintain portion control and quality checks on all food leaving the kitchen.
- Leadership & Teamwork
- Supervise and support line cooks, prep staff, and porters during service.
- Provide training and guidance to staff on technique, food safety, and efficiency.
- Step in to lead the kitchen when the Chef/Owner is unavailable.
- Organization & Operations
- Manage daily prep sheets and ensure all mise en place is ready for service.
- Monitor inventory, communicate low-stock items, and help maintain par levels.
- Assist with ordering and vendor communication as needed.
- Ensure compliance with NYC Department of Health standards, maintaining a clean and safe work environment.
- Efficiency & Cost Control
- Work within established food cost goals and minimize waste.
- Identify opportunities to streamline kitchen operations without sacrificing quality.
Qualifications
- Minimum 3–5 years of professional kitchen experience, with at least 1 year in a leadership or sous chef role.
- Strong knife skills, cooking techniques, and understanding of seasonality in kitchen operations.
- Knowledge of NYC DOH food safety and sanitation regulations (Food Protection Certificate required).
- Ability to lead by example, stay calm under pressure, and foster a positive kitchen culture.
- Organized, detail-oriented, and comfortable with inventory and prep planning.
- Computer literacy is required.
- Bilingual in English and Spanish would be a plus.
- A passion for hospitality and neighborhood dining.
Reports to: Owner / Head Chef
Schedule: Full-time, with a mix of prep and service shifts, including weekends. We currently serve breakfast and lunch.
