Job Title: Artisan Pasta Maker / Prep Cook

Job Summary:
The Artisan Pasta Maker / Prep Cook is responsible for the daily production of fresh pasta, with a focus on extruded pasta, for a high-volume culinary operation. This role also supports the kitchen team with general prep tasks to maintain efficient production and service.
Key Responsibilities:
- Produce a variety of fresh pastas from scratch, including extruded and hand-shaped varieties
- Operate and maintain pasta machines and related equipment
- Prepare mise en place and assist with daily prep tasks as directed by culinary leadership
- Maintain consistency, quality, and portion standards in all pasta and prep production
- Follow proper food handling, sanitation, and safety procedures
- Assist in inventory management and ingredient organization
Requirements:
- Proven experience making fresh pasta, particularly extruded pasta, in a professional setting
- Culinary background with experience in a high-volume kitchen
- Strong knife skills and overall prep proficiency
- Ability to work efficiently, follow directions, and support team needs
- Detail-oriented with a commitment to product quality and kitchen cleanliness
