Assistant General Manager – Food & Beverage

The Quoin Hotel | Wilmington, DE

The Quoin Hotel, part of the Method Co. collection, is seeking an experienced and dynamic Assistant General Manager – Food & Beverage to join our leadership team. Housed in a beautifully restored 19th-century building in the heart of downtown Wilmington, The Quoin blends timeless design, elevated dining, and warm, thoughtful service. The Assistant General Manager will oversee all food & beverage operations across our outlets, ensuring exceptional guest experiences and operational excellence that reflect the character and soul of The Quoin brand.

Key Responsibilities
  • Oversee daily operations of all food & beverage outlets including the restaurant, bar, coffee shop, and rooftop, ensuring seamless service and guest satisfaction.

  • Lead, mentor, and develop front-of-house and back-of-house teams to uphold service standards and drive engagement.

  • Collaborate with the Executive Chef and Director of F&B to curate menus, enhance programming, and drive profitability.

  • Ensure consistent adherence to health, safety, and quality standards across all outlets.

  • Manage financial performance through labor controls, cost management, and revenue growth initiatives.

  • Partner with the hotel’s leadership team on guest relations, events, and overall brand experience.

  • Support in recruiting, training, and performance management to foster a culture of excellence and accountability.

  • Participate in strategic planning and contribute to the continued evolution of The Quoin’s F&B identity.

Qualifications
  • Minimum 3–5 years of progressive leadership experience in luxury or boutique hotel food & beverage operations.

  • Strong leadership presence with a hands-on management style and passion for hospitality.

  • Proven ability to drive guest satisfaction, financial results, and team performance.

  • Deep understanding of restaurant operations, beverage programs, and guest service standards.

  • Excellent communication, organization, and problem-solving skills.

  • Flexibility to work evenings, weekends, and holidays as required by the operation.

519 N. Market St., on the National Historic Registry, is the address of the former Security Trust & Safe Company Building, a two-story Victorian Romanesque brownstone designed by Frank Furness, and is now a 24 room boutique hotel that offers multiple dining amenities.

The restaurant design have been melded with features and fixtures from local makers that reflect the building’s original era, features a dining room adorned with warm wood accents, plush upholstered banquets, an illuminating ceiling design, and features an open kitchen showcasing a wood-fired oven & grill focusing on Italian-influenced, wood-fired cuisine that emphasizes the smokiness and char of the wood burning oven & grill. Serving a casual, yet sophisticated & seasonally driven menu, The Quoin is helmed by esteemed chef Jim Burke.

In addition to the Restaurant, The Quoin will be the home of a 45 seat speakeasy style cocktail bar, that will feature an extensive list of signature crafted cocktails, paying homage to the city’s history and former famous resident’s.
