The Quoin Hotel, part of the Method Co. collection, is seeking an experienced and dynamic Assistant General Manager – Food & Beverage to join our leadership team. Housed in a beautifully restored 19th-century building in the heart of downtown Wilmington, The Quoin blends timeless design, elevated dining, and warm, thoughtful service. The Assistant General Manager will oversee all food & beverage operations across our outlets, ensuring exceptional guest experiences and operational excellence that reflect the character and soul of The Quoin brand.
Key Responsibilities-
Oversee daily operations of all food & beverage outlets including the restaurant, bar, coffee shop, and rooftop, ensuring seamless service and guest satisfaction.

Lead, mentor, and develop front-of-house and back-of-house teams to uphold service standards and drive engagement.

Collaborate with the Executive Chef and Director of F&B to curate menus, enhance programming, and drive profitability.

Ensure consistent adherence to health, safety, and quality standards across all outlets.

Manage financial performance through labor controls, cost management, and revenue growth initiatives.

Partner with the hotel’s leadership team on guest relations, events, and overall brand experience.

Support in recruiting, training, and performance management to foster a culture of excellence and accountability.

Participate in strategic planning and contribute to the continued evolution of The Quoin’s F&B identity.

Minimum 3–5 years of progressive leadership experience in luxury or boutique hotel food & beverage operations.

Strong leadership presence with a hands-on management style and passion for hospitality.

Proven ability to drive guest satisfaction, financial results, and team performance.

Deep understanding of restaurant operations, beverage programs, and guest service standards.

Excellent communication, organization, and problem-solving skills.

Flexibility to work evenings, weekends, and holidays as required by the operation.
