Food & Beverage Manager – Oceana Hotel

Overview
Oceana Hotel, a luxury coastal property known for its refined yet relaxed atmosphere, is seeking an experienced Food & Beverage Manager to lead and elevate our In-Room Dining, Breakfast, and Pool operations, while also supporting the successful integration and alignment of service standards with our signature restaurant La Monique.
This position plays a key leadership role in ensuring flawless daily execution, guest satisfaction, and operational excellence across all front-of-house F&B touchpoints of the hotel.
Key Responsibilities
Operational Leadership

Oversee daily operations of Room Service, Breakfast, and Pool Service, ensuring efficiency, consistency, and adherence to luxury standards.

Maintain direct floor presence during peak periods to guide service flow, guest interaction, and staff engagement.

Ensure that La Monique standards and philosophies are reflected across all hotel dining experiences, maintaining seamless integration between outlets.

Monitor and maintain all OSE, china, glassware, and equipment to uphold quality presentation and service readiness.
Guest Experience & Service Standards

Deliver an exceptional guest experience by anticipating needs, personalizing service, and resolving guest concerns promptly and professionally.

Lead and implement F&B service training programs that focus on product knowledge, elegance of service, and Forbes/Four Seasons-level standards.

Regularly review guest feedback to identify opportunities for improvement and innovation.
Team Leadership & Training

Supervise, schedule, and motivate a team of servers, attendants, and bar staff across breakfast, pool, and IRD.

Provide continuous coaching and professional development for team members.

Foster a culture of accountability, teamwork, and pride in service.
Financial & Administrative Responsibilities

Support the Director of Food & Beverage in budget management, cost control, and revenue optimization strategies.

Assist in menu implementation, pricing updates, and product selection in collaboration with culinary and beverage leadership.

Maintain accurate inventory records, staff scheduling, and payroll compliance.
Collaboration & Cross-Functional Support

Work closely with culinary, front office, and housekeeping teams to ensure seamless coordination of in-room and pool experiences.

Participate actively in hotel leadership meetings and contribute to ongoing operational improvement initiatives.

Support the pre-opening and rollout of new menus, concepts, and promotions for La Monique and Oceana.
Qualifications

Minimum 3 years of F&B leadership experience in a luxury or lifestyle hotel or resort.

Proven success managing breakfast, pool, and/or in-room dining operations.

Strong knowledge of luxury service standards, product presentation, and guest engagement.

Excellent communication, organization, and leadership skills.

Hands-on, detail-oriented, and adaptable to a dynamic, guest-focused environment.

Must be available to work a flexible schedule, including weekends and holidays.
