Le Coupé is seeking a skilled and reliable Prep & Butcher to join our small, tight-knit kitchen team. This position focuses primarily on chicken butchery, along with other prep tasks that support daily service. The ideal candidate is a professional with very strong knife skills, a commitment to cleanliness, and a respect for doing things the right way.
Schedule
Part-time | Tuesday – Saturday Mornings (7am/8am-1pm/2pm) (Very flexible for the right candidate)
Responsibilities
• Lead all chicken butchering for daily prep (Butcher chicken for sandwiches, bone in thighs, and tenders, pound chicken, marinate chicken for next day service, bread chicken for current day service)
• Prepare and mix slaw, sauces, and other recipes needed on daily prep list
• Maintain clean and organized prep areas following Health Department standards
• Communicate clearly with the kitchen team to stay aligned on daily prep needs
• Follow all food safety and sanitation protocols
• Support other prep tasks as needed to meet service demands
Requirements
• Proven experience butchering poultry (knife skills test required as part of interview)
• Strong knife skills and understanding of safe butchery practices
• Reliable, punctual, and detail-oriented
• Works clean, efficient, and calm under pressure
• Team-oriented with strong communication skills
