Desired qualifications:
- Minimum 2 years of professional experience as a butcher or fishmonger in a high-quality kitchen
- Skilled in whole-animal breakdown, portion control, and yield optimization
- Proficient in fish fabrication, including filleting, skinning, and pin-boning a variety of seafood
- Familiarity with Italian cuisine and traditional cuts is a strong plus
- Meticulous attention to cleanliness, organization, and food safety standards
- Dependable, self-motivated, and a team player
- Full-time availability, including early morning and weekend shifts
