Overview

The Pastry Sous Chef supports the Chef De Cuisine in leading all aspects of bread, pastry, and viennoiserie production, including quality, consistency, staffing, and systems. This role acts as the day-to-day leader of the pastry department, ensuring smooth operations, training, and team development. The Pastry Sous Chef maintains a hands-on presence in the kitchen, actively producing alongside the team, upholding standards, and modeling a guest-focused, collaborative culture. This position reports directly to the CDC. 

Responsibilities

  • Ensure all product specifications, quality standards, department rules, and procedures are followed by the pastry team.
  • Act as a working leader on shift, assisting with production, baking, lamination, restocking, cleaning, and organizing as needed.
  • Partner with the Chef De Cuisine on scheduling, ordering, inventory, and labor management to ensure operational efficiency.
  • Train, mentor, and develop pastry staff providing consistent feedback and coaching on technique and best practices.
  • Support recipe testing, development, and product launches, contributing ideas that reflect seasonality and Sightglass’s culinary identity.
  • Identify efficiencies and workflow improvements; share recommendations with Chef De Cuisine.
  • Serve as point of contact for the team when Chef De Cuisine is not on-site; maintain clear communication with leadership about department needs.
  • Collaborates regularly with the Sous Chef on overall menu execution. 
  • Maintain a safe, clean, and organized kitchen environment in compliance with health and safety standards.
  • Participate in monthly inventory counts and assist with cost control efforts.
  • Foster a positive, collaborative, and professional team culture that aligns with company values.
  • Other duties as assigned.

Qualifications (Knowledge, Skills & Abilities):

  • ServSafe Manager certification (or willingness to obtain)
  • 2+ years of BOH experience in a bakery, including bread or viennoiserie production
  • Prior leadership or shift lead experience strongly preferred
  • Strong technical skills in pastry production and a passion for continuous skill development
  • Ability to train and motivate teams to consistently produce excellent food
  • Organized, detail-oriented, and comfortable balancing production with supervisory duties
  • Problem-solving mindset with ability to adapt in a high-volume, high-energy environment
  • Excellent communication and interpersonal skills
  • Must be able to legally work in the United States

Physical Demands & Work Environment:

  • Able to work a flexible schedule to meet the needs of the business, including evenings, weekends, and holidays
  • Able to grasp, lift and carry up to 50 pounds as needed
  • Able to maneuver effectively around the kitchen, restaurant office, and up/downstairs

Compensation Details

Compensation: Hourly ($28.00 - $30.00) plus tips

Estimated Weekly Tips: $150

Sightglass began as an aspiration to source, produce, and share distinctive, quality-focused coffees. In 2009, we began with a small, rickety service-cart in San Francisco’s SoMa district. Equipped with a few Chemex pots and a leaky vintage 2-group espresso machine, we served coffee to the neighborhood just behind a roll-up garage door housed in a sturdy 1914 built warehouse. People came to visit us, and remarkably, even came back to taste more. Two years and many coffees later, the entirety of this warehouse would become our production roastery, a dynamic & unconventional coffee bar, a community gathering space, and our company headquarters.
