Delaware North’s Patina Restaurant Group is seeking a passionate and experienced Executive Chef to join our team at Stella 34 in New York, New York. Located in the heart of Manhattan, Stella 34 is known for its elegant Italian fare, featuring creative wood-fired pizzas and house-made pastas, all rooted in the rich traditions of Italian cuisine. We’re looking for a culinary leader with a strong knowledge of Italian food, including expertise in making homemade pasta and authentic pizza dough. The ideal candidate will not only bring culinary excellence to the kitchen but also demonstrate a talent for training, mentoring, and developing staff, fostering a culture of continuous learning and passion for food.

Pay

Minimum – Anticipated Maximum Base Salary: $94,100 - $127,000 / year

In addition to base salary, we offer an annual bonus plan based on company and individual performance, or a role-based, uncapped sales incentive plan. The advertised pay range represents what we believe at the time of this job posting, that we would be willing to pay for this position. Only in special circumstances, where a candidate has education, training, or experience that far exceeds the requirements for the position, would we consider paying higher than the stated range. What will you do?

  • Hire, train, and mobilize kitchen and service teams
  • Develop and maintain recipes, portion specifications, and standard preparation procedures; determine purchasing specifications and budgetary allotments for all menu items
  • Prepare operational reports; highlight progress, adverse trends, and make recommendations for success
  • Maintain knowledge of and compliance with all company and health department policies, regulations, and standards
  • Possess working knowledge of company invoice tracking, labor tracking, schedule preparation, food cost management, labor cost management, inventory control, and hiring, counseling, and termination policies

More about you

  • Minimum three years’ experience as an Executive Chef in a high-volume industry-leading concept with culinary experience in established restaurants 
  • Certificate or degree in Culinary Arts & ServSafe and Food Safety Handler certifications preferred but not mandatory
  • Strong financial and computer skills; experience working with and understanding of P&Ls and budgeting; knowledge of Microsoft Office Suite programs (Word, Excel, PowerPoint, and Outlook) and point-of-sale (POS) systems
  • Ability to work a flexible schedule to accommodate business needs
  • Proven ability to lead team members clearly and concisely while positively influencing behavior and performance

With sixth-floor views of the Empire State building and three wood-burning ovens, Stella 34 Trattoria is a modern Italian trattoria and the dining star of Macy's flagship store.

Executive Chef Jarett Appell offers Neapolitan pizza from wood-burning ovens with fior di latte mozzarella, Caputo flour imported from Naples, San Marzano tomatoes from the foothills of Mount Vesuvius and water meticulously sourced from local wells to match the pH and mineral balance of the natural spring water in Naples. The menu showcases al forno entrées, house-made pasta, fresh salads, "piccoli piatti" – signature Italian antipasti designed for sharing – and an all-Italian wine list of more than 100 selections.

The restaurant also features a Cibi Ronda, an Italian take-away counter, where busy shoppers can pick up fresh salads, authentic paninis, focaccia bread, coffee and Italian treats.

Stella 34 Trattoria is also the New York home to Italy's finest gelateria, Vivoli. After over 80 years of delighting customers in Italy, Stella 34 Trattoria is their first-ever location outside of Florence. Famed for their crema and rotation of seasonal flavors, Vivoli remains dedicated to creating pure gelati and sorbetti with fresh, high quality ingredients and family crafted recipes.

Open seven days a week for lunch, dinner, brunch and drinks at the bar or lounge.
