Pastry Sous Chef for Palladino’s Steak and Seafood House

Job Responsibilities
- Oversee daily production of all dessert and pastry items
- Lead and manage a team of five pastry staff members
- Handle ordering and production planning for the pastry department
- Occasionally manage scheduling, timesheets, and assist with payroll
- Participate in interviewing, hiring, onboarding, and performance reviews for back-of-house staff
- Collaborate with front-of-house team to set and maintain inventory pars
- Assist in developing and testing dessert menus and recipes alongside the Executive Pastry Chef and team
- Maintain organization and cleanliness of the kitchen, including dry storage, walk-in, and pastry freezer areas
- Conduct daily quality control checks on all pastry products
Qualifications
- Minimum 2 years of pastry experience in a restaurant, including at least 1 year in a leadership or management role
- Strong passion for pastry and a solid foundation in food knowledge
- Experience in service and expediting in a high-paced kitchen environment
- Reliable, hardworking, and committed to excellence
- Personable and approachable with strong interpersonal skills; comfortable in guest-facing interactions
- High standards for cleanliness and food safety; NYC Food Handler's License preferred
- Flexible availability, including weekends, holidays, and long shifts
What You’ll Do
- Assist with all aspects of pastry production, from sourcing to final plating, ensuring consistency and quality
- Provide support, training, and mentorship to pastry team members
- Contribute to menu and seasonal item development with a focus on both creativity and classic technique
- Partner with leadership to manage costs, inventory, and labor
- Participate in ordering and inventory control while maintaining product quality
- Support daily operations and help identify areas for workflow improvement
- Ensure strict adherence to health, safety, and sanitation standards
- Take on additional responsibilities as needed to support the overall success of the pastry program
What you’ll bring:
- At least 2 years of hands-on pastry kitchen experience, ideally in fine dining, luxury hotels, or high-volume establishments
- Strong pastry and baking skills grounded in traditional methods, with an openness to innovation
- Team-oriented mindset with the ability to contribute positively to a collaborative work environment
- Excellent organizational and time management skills, with effective communication
- Willingness to work evenings, weekends, holidays, and adapt to the demands of a fast-paced kitchen
- Fluent in English; Spanish is a plus
Physical Requirements:
- Ability to stand, walk, and work in a fast-paced kitchen environment for extended periods.
- Regularly required to talk, hear, reach, and handle tools and equipment.
- Must occasionally lift and move up to 50 pounds.
- Exposure to heat, cold, and steam in a kitchen environment.
