Chef de Partie — Birdsong

Birdsong is a two Michelin–starred restaurant in San Francisco, where Chef Chris Bleidorn’s cooking explores heritage cuisine with heart, craft, and a deep sense of place—grounded in whole animal cookery and thoughtful sourcing.

Now we’re looking for a Chef de Partie who’s ready to take ownership of a station and contribute to a kitchen that values craft, consistency, and teamwork. This is a role for someone who’s hungry to learn, proud of the fundamentals, and motivated by the quiet satisfaction of doing things the right way—every day.

The role

As Chef de Partie, you’ll be responsible for mise en place and service execution for your station, while supporting the broader success of the tasting menu. Our dining room is integrated with the kitchen, so chefs are part of the guest experience—present, professional, and connected to the food we serve.

This isn’t a “clock in, cook, clock out” position. It’s a place to build real mastery: organization, repetition, refinement, and growth over time.

You’ll be responsible for:

  • Managing and organizing your station (prep, tools, par levels, cleanliness)

  • Executing service at a high level—calm, precise, consistent

  • Upholding Birdsong’s standards across the full tasting menu, not just your station

  • Maintaining clean work habits and strong attention to detail

  • Collaborating closely with the team to improve systems and flow

  • Engaging with guests when appropriate, with confidence and professionalism

You might be a fit if you:

  • Are humble, hard-working, and genuinely motivated to improve

  • Have 1+ years in high-end kitchens (Michelin experience preferred)

  • Want stability and growth—we’re looking for someone who plans to stay and evolve with the team

  • Have strong technical fundamentals and comfort with professional equipment

  • Bring a high level of ownership, organization, and accountability

  • Display a willingness to learn from all team members, regardless of position, age, or background

  • Maintain professional standards (California Food Handler’s certification required; manager’s certification a plus)

Birdsong is a fine dining restaurant focused on the ingredients and cooking methods of the Pacific Northwest. Executive Chef and Owner Chris Bleidorn (whose previous experience includes Saison, Atelier Crenn, Benu and Alinea) will pay homage to cooking techniques of the past, with a playfully refined and thoughtful menu that highlights the connection between city and nature.

Birdsong will reference ancient cooking methods: utilizing open fire and smoke, dry-aging meat, and experimenting with a number of fermenting techniques. Dishes will highlight key ingredients like cold water shellfish, wild game (like elk, buffalo, boar), berries, mushrooms, and other seasonal ingredients. Birdsong’s quest to preserve fundamental cooking techniques of the past in a contemporary setting is inspired by naturalist writer Michael Frome’s sentiment that “each succeeding generation accepts less and less of the real thing because it has no way of understanding what has been lost.”
