JOB OVERVIEW:
The Line Cook specializing in the grill station is responsible for executing high-level grilling techniques with precision, consistency, and speed in a fine dining environment. This role requires mastery of cooking temperatures, flavor development, and timing, ensuring every dish meets the restaurant’s standards of excellence. The Grill Cook collaborates closely with the culinary team to deliver an exceptional dining experience for every guest. The Grill Cook must uphold the standards of excellence that define JKS, professional etiquette and compliance with all health and labor regulations.
RATE OF PAY:
$20.00 - $22.00 per hour, non-exempt, FLSA eligible for overtime
KEY RESPONSIBILITIES:
- Assist in opening and closing procedures to prepare the kitchen for service and maintain cleanliness and organization throughout.
- Prepare, season, and cook proteins and vegetables on the grill station to exact specifications
- Manage and maintain proper cooking temperatures for meats, seafood, and specialty items.
- Ensure consistency in flavor, presentation, and portioning of all grill items.
- Maintain mise en place for the grill station, ensuring readiness for service at all times.
- Execute dishes according to chef’s direction and fine dining standards, with attention to detail and timing.
- Monitor and maintain grill equipment, ensuring cleanliness, safety, and proper functionality.
- Collaborate with other line cooks and chefs to ensure smooth, coordinated service.
- Uphold NYC Department of Health and restaurant sanitation guidelines.
- Assist with butchery, marination, and other prep duties related to the grill station.
- Support in training junior cooks and sharing best practices for grilling techniques.
- Attend briefings, meetings, and training sessions to stay informed about menu offerings, updated protocols, and industry best practices.
- Report any health & safety issues or faulty equipment promptly to management for resolution.
QUALIFICATIONS:
- 2–3 years of line cook experience, with a focus on the grill station, preferably in fine dining or high-volume upscale kitchens.
- Strong knowledge of grilling techniques, meat and seafood cookery, temperature control, and flavor development.
- Excellent knife skills and understanding of butchery basics.
- Ability to multitask and remain organized under pressure in a fast-paced service environment.
- Strong teamwork, communication, and attention to detail.
- Availability for evenings, weekends, and holidays.Good time-management and teamwork skills.

- Must be able to stand or walk for extended periods of time and lift up to 50 lbs.
