Position Summary

The Senior Director of F&B Operations – Ritz-Carlton NoMad is a strategic and hands-on leader responsible for overseeing the success of all José Andrés Group (JAG) venues within the Ritz-Carlton NoMad hotel in New York City. This senior leader will manage both front-of-house (FOH) and back-of-house (BOH) operations, ensuring flawless service execution and operational excellence. Serving as the primary point of contact for Ritz-Carlton hotel leadership, ownership, and JAG stakeholders, this role drives performance, fosters collaboration, and delivers an extraordinary guest experience. Acting as both operator and brand ambassador, the Senior Director will embody JAG’s values while upholding the Ritz-Carlton tradition of refined, world-class service.

Key Responsibilities

Operational Leadership

  • Oversee daily FOH and BOH operations across all JAG outlets within the Ritz-Carlton NoMad.
  • Ensure alignment with JAG culture, service standards, and operational procedures while integrating Ritz-Carlton brand values.
  • Develop, implement, and refine Standard Operating Procedures (SOPs) to maximize efficiency, safety, and compliance.
  • Partner with Culinary, Marketing, HR, Finance, and IT teams to deliver seamless operations and guest satisfaction.
  • Maintain the highest levels of facilities presentation, service execution, and regulatory compliance.

Guest Experience & Brand Standards

  • Champion JAG and Ritz-Carlton service philosophies, ensuring every touchpoint reflects a commitment to excellence.
  • Serve as the direct liaison with hotel leadership to deliver an integrated guest experience across rooms, dining, and events.
  • Actively monitor guest feedback, resolve escalated service issues, and drive continuous improvement initiatives.

Financial Performance

  • Lead financial planning and execution, including annual budgeting, forecasting, and P&L management.
  • Drive revenue growth through strategic programming, menu development support, and guest engagement initiatives.
  • Monitor labor, inventory, and vendor management for maximum profitability and efficiency.
  • Deliver clear financial reporting with insights and action plans.

Team Leadership & Development

  • Inspire, mentor, and lead multi-disciplinary FOH and BOH teams.
  • Build a high-performance culture grounded in accountability, hospitality, and teamwork.
  • Partner with HR to attract, recruit, and retain top hospitality talent.
  • Conduct regular performance evaluations, coaching, and succession planning to develop future leaders.

Partnership & Collaboration

  • Serve as the primary point of contact between JAG and Ritz-Carlton leadership, ensuring shared goals and standards are met.
  • Coordinate with ownership, asset management, and hotel departments to align on strategic priorities and financial performance.
  • Represent JAG at the property level as a cultural ambassador and strategic partner.

Required Qualifications

  • 8–10 years of senior leadership experience in fine dining or luxury hospitality, ideally within NYC.
  • Proven expertise managing high-volume, luxury FOH and BOH operations within a hotel or lifestyle environment.
  • Strong track record in P&L management, budgeting, and financial accountability.
  • Prior experience opening and operating venues within luxury hotels highly preferred.
  • Demonstrated ability to implement service standards and training programs that elevate guest experience.
  • Skilled in developing, coaching, and retaining high-performing teams.
  • Excellent communication, presentation, and relationship-building skills.
  • Proficiency with hospitality technology platforms (MICROS, Toast, HotSchedules, Google Workspace, etc.).
  • Deep knowledge of food and beverage operations, with emphasis on fine dining service standards.

Working Conditions & Physical Requirements

  • Ability to stand and walk for extended periods (up to 8 hours).
  • Must be able to lift up to 15 lbs. regularly and up to 30 lbs. occasionally.
  • Ability to manage multiple priorities in a fast-paced, high-stakes environment.
  • Frequent use of hands, bending, reaching, listening, and visual acuity.
  • Availability to work evenings, weekends, and holidays as required.
