5 Acres is a high-volume, fast-paced American restaurant located in the heart of Rockefeller Center. With a commitment to seasonal ingredients, warm hospitality, and large-scale events, we provide a dynamic dining experience that reflects the best of modern American cuisine. We're seeking a talented and driven Chef de Cuisine to lead our back-of-house operations and continue elevating our culinary program.

Job Description:
We are looking for an experienced and passionate Chef de Cuisine to join our leadership team. This role requires a chef with a strong foundation in American cuisine, who thrives under pressure and is confident managing high-volume service and large events. The ideal candidate will bring a creative approach to menu development, lead with integrity, and set the tone for kitchen culture and consistency.

Responsibilities:

  • Lead day-to-day kitchen operations with a hands-on approach during service

  • Create and execute menus focused on American cuisine with seasonal and locally sourced ingredients

  • Maintain high standards for food quality, presentation, and consistency across all service periods

  • Manage BOH staff scheduling, training, and development

  • Collaborate closely with the Events and FOH teams to execute large-scale events, both in-house and off-site

  • Oversee inventory management, ordering, and food cost control

  • Ensure cleanliness, sanitation, and compliance with health and safety regulations

  • Be present and proactive for 50+ hours per week, including nights, weekends, and holidays

Qualifications:

  • Minimum 3–5 years of experience as a Sous Chef or Chef de Cuisine in a high-volume restaurant setting

  • Strong foundation in American culinary techniques and seasonal menu planning

  • Proven ability to lead and inspire a kitchen team in a fast-paced, high-pressure environment

  • Experience coordinating and executing events with 100+ guests

  • Excellent organizational and communication skills

  • Food Protection Certificate (or ability to obtain)

Chef Greg Baxtrom (of acclaimed Olmsted, Maison Yaki and Patti Ann’s in Brooklyn) is excited to open Five Acres in Midtown in Fall 2022. Located in the heart of New York’s bustling Rockefeller Center, Five Acres brings chef Greg’s defining creative, seasonal ethos to Manhattan for the first time. Each element of the restaurant – from the intimate private dining room built with wood from Greg’s family farm to the ethereal design of the dining room filled with vibrant greenery and natural textures – nods to his family’s five acre farm right outside of Chicago.

Opening November 2022, Five Acres will be open for dinner, lunch and breakfast, and the private dining room will be available for bookings.
