In spring 2025, Maydan Market will open in LA’s West Adams neighborhood, the first West Coast project by Rose Previte, co-owner of DC’s Michelin-starred Maydan, Compass Rose, Medina, and Kirby Club restaurants, as well as LA’s upcoming Maydan Market. Maydan in DC first opened in 2017 drawing critical acclaim as Best New Restaurant in Bon Appetit, FOOD & WINE, and GQ, nominated by the James Beard Foundation for both Best New Restaurant and Outstanding Wine Program, and earning a Michelin star. Compass Rose opened in 2014 winning the RAMMY for best casual restaurant in the nation’s capital and one of the Washington Post’s “Favorite Places to Eat.”
This new 10,000-square-foot market will be a home for small businesses to flourish, anchored by a live fire hearth, like its DC namesake restaurant. Inspired by markets from around the world, Maydan Market will bring diverse gems together under one roof including a Maydan restaurant and bar; Compass Rose, an indoor/outdoor patio bar with bites, cocktails, and natural wine; and will be home to five Los Angeles food businesses and the retail space, Sook. Each with their own distinctive cuisine and critical acclaim.

Job Title: Kitchen Manager/Supervisor

Job Summary:
The Kitchen Manager oversees back-of-house operations that encompasses the individual restaurants and the “vendor” spaces. This role involves managing kitchen staff, inventory, scheduling, and enforcing health and safety standards. The shared spaces organization and cleanliness is essential for the success of the property and will be held to the highest of standards.
Critical Areas of Responsibility:
Staff Management -
- Hire, train, and supervise porter and dishwashing team. Ensure that porter/dishwashing staff know how to use the equipment to its full usage
- Create work schedules and ensure adequate staffing for all shifts with the guidance from the back of house management team
Kitchen Operations -
- Monitor and maintain cleanliness and organization of the kitchen.
- Ensure compliance with all food safety and sanitation guidelines (local health department, HACCP, etc.)
- Create, track and log: Temperature logs, sanitation schedule/ checklist, Cleaning log
- Conduct daily equipment checks to ensure proper order.
- Maintenance schedules on equipment are in place and followed through based on equipment needs
- Maintain equipment and schedule regular maintenance or repairs.
Inventory -
- Receive orders, sign invoices with “restaurants” approvals, organize and process product to its designated place, sign and log time & temp for products that have high chance of food born illness
- Track inventory and minimize waste and spoilage.
- Organize and maintain communal kitchen, walk-ins, and dry goods area; ensure cleanliness and proper labeling
- Rotate stock according to FIFO and Maydan Vendor Labeling procedures
Assist with monthly inventory counts and cost control audits
Receive all deliveries and verify items against purchase orders and vendor purchase order (Club 104)
- Receive, label, and store deliveries properly in appropriate vendor storage space
- Inspect items for damage, spoilage, accuracy, and quality standards
Health & Safety -
- Implement and enforce proper food handling procedures and hygiene practices.
- Ensure all safety procedures are followed to prevent kitchen accidents or injuries.
- Ensuring all waste is removed properly which includes, compostable, regular waste, recycling, etc.
- Manage republic service trash pick up schedule
- Conduct monthly Health inspection audits for vendors and communal kitchen in anticipation of LA County Health Inspection
Communication & Collaboration -
- Maintaining a direct connection between “ the restaurants” to ensure a team work effort, accomplish daily tasks that are crucial for operations, and assist in overseeing scheduling of shared areas
- Assisting with the ordering process for the property as a whole upon training from the supervisor for specific vendors that will be determined ( linen, shared paper goods, etc… )
Market Vendors -
- Collect log and organize vendor ServSafe Food Handler Cards
- Inspect vendor stalls to ensure health inspection safety points are met
- Collect and Log low boy temp logs
- Maintain purchase orders from vendors
- FIle and Log all shell fish tags
- Maintain list of monthly expenses to be billed to vendors
- Track and monitor linen distribution and billing
- Track and monitor Cleaning (overnight and day porters)
Qualifications:
- Proven experience as a Kitchen Manager or similar leadership role in a high-volume restaurant.
- In-depth knowledge of food safety regulations, kitchen equipment, and restaurant operations.
- Strong leadership, organizational, and multitasking skills.
- Ability to thrive in a fast-paced environment and handle pressure.
- ServSafe Certification or equivalent (required or must obtain within 30 days).
- Work Environment:
- Fast-paced kitchen environment with standing for extended periods.
- Must be able to lift up to 50 lbs.
- Evening, weekend, and holiday availability required.
