- Receives the produce from the vendor, taking care to check the quality of each item
- Thoroughly washes the produce items
- Cuts and prepares the produce in accordance with Din Tai Fung’s standard cutting sizes and procedures (must be comfortable using a knife and cutting glove)
- Labels all items in accordance with Health Department regulations and Din Tai Fung procedures
- Attends monthly staff meetings and Prep Cook meetings
- Keeps all kitchen areas clean and sanitized
- Organizes items within the walk-in coolers and freezers
- Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
- Assists with regular deep cleaning of the kitchen
- Maintains confidentiality regarding all propriety information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“)
