Line Cooks (Steamers) are responsible for steaming the dumplings for the guests, as well as helping support the dumpling team with preparing, assembling, and closing the dumplings. Line Cooks (Steamers) are responsible for opening and closing the steamer stations, as well as restocking and organizing dumplings to be steamed throughout the shift. Line Cooks (Steamers) may work from a show kitchen and thus must maintain a clean, groomed, and professional appearance.

- Rolls the dumpling/bun skin
- Stuffs the dumplings/buns
- Closes and arranges the dumplings/buns in the steamer properly
- Adds necessary meat and allergen identifiers
- Steams the dumplings/buns for the appropriate amount of time
- Cleans the dumpling room and the steamer station
- Labels all items in accordance with Health Department regulations and Din Tai Fung procedures
- Attends monthly staff meetings and Dumpling meetings
- Keeps all kitchen areas clean and sanitized
- Organizes items within the walk-in coolers and freezers
- Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
- Assists with regular deep cleaning of the kitchen
- Maintains confidentiality regarding all propriety information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“).
