POSITION OVERVIEW

We are looking for a true culinary professional to join our team of artisan bakers. As a Baker at Ole & Steen you will learn about real Danish bread and pastries. You will produce artisan Danish breads, rolls, and laminated dough as a part of an enthusiastic and international team, 


The ideal candidate must be enthusiastic about baking, love long fermentation times, and enjoy working as a team. You must adhere to health and safety standards. The goal is to enhance customer satisfaction so that we can maintain and expand our clientele and you must expect to produce a high volume of products for our stores. This role is ideal for someone who is interested in learning about our Danish heritage and learn about real Danish breads and pastries.

 
RESPONSIBILITIES

  • Accurately measure, scale, and mix dough ingredients using commercial mixers, dough sheeters, and presses in accordance with standardized recipes and production targets.
  • Execute precise lamination of croissant and other viennoiserie doughs, ensuring proper incorporation of lamination fat and maintaining defined structural standards.
  • Monitor and document dough and butter/fat temperatures before and during lamination to ensure consistent product integrity and prevent breakage or separation.
  • Visually and physically inspect raw materials for freshness, quality, and conformity to specifications; report discrepancies promptly.
  • Adhere to established portioning standards to support product consistency and minimize waste.
  • Track and communicate ingredient usage; assist with inventory management by monitoring par levels and alerting supervisors of low stock.
  • Correctly label, date, and store all prepped ingredients and laminated doughs following FIFO and food safety guidelines.
  • Conduct routine checks on equipment to verify operational safety and sanitation compliance; escalate maintenance concerns as needed.
  • Maintain a clean, sanitized, and well-organized workstation in alignment with internal hygiene protocols and health department regulations.
  • Collaborate with the viennoiserie and baking teams to ensure smooth handoff and alignment on daily production needs.

QUALIFICATIONS & REQUIREMENTS

  • Completion of a Culinary School program or apprenticeship preferred
  • 2-3 years of professional lamination experience preferred. Experience with Danish or Scandinavian baking methods is a huge plus!
  • Experience with mixing, bench work, proofing, and baking bread a plus
  • Ability to work overnight, weekends, and some holidays
  • Able to lift 50+lbs without restrictions
  • The ability to stand and/or bend for extended periods of time to perform essential job functions
  • Basic math skills
  • Excellent time management skills
  • Thoroughly follow company procedures according to health and safety standards
  • Adhere to all food safety regulations and procedures

Ole & Steen was founded in 1991 by the Danish bakers Ole Kristoffersen and Steen Skallebæk and originally called Lagkagehuset or “The Layer Cake House”. Ole & Steen is pioneer in the resurgence of artisanal and handcrafted baking practices in Denmark. In 2008 the two bakers joined forces and became the organization we know today. 


We have been Denmark’s favorite bakery for more than 30 years, serving delicious Danish breads, pastries, cakes, single estate coffee and food. We opened our first bakery on Union Square in 2019 to huge acclaim and fantastic reviews and we’re continuing our exciting growth journey – we currently operate 3 retail stores across NYC, and we have plans to grow and expand over the coming years!
