About Winner Butcher:
Winner Butcher is a neighborhood butcher shop in Brooklyn, NY. We break down whole animals in-house and sell fresh cuts, house-made sausages, and other prepared items directly to our community. About the Role:
We’re looking for an experienced Head Butcher to lead day-to-day operations in our butcher shop. This role oversees all aspects of whole animal breakdown, fresh case preparation, staff training, and customer experience. The Head Butcher works closely with our sourcing and culinary teams to ensure our product reflects our commitment to sustainability, transparency, and quality.
Key Responsibilities:
- Lead whole animal butchery of beef, pork, and lamb, ensuring proper yield, cut quality, and inventory control
- Manage and mentor a small team of butchers, apprentices, and counter staff
- Maintain a clean, safe, and efficient work environment in accordance with all health codes and OSHA standards
- Collaborate with leadership to create seasonal value-added products and specials
- Support retail service and customer education at the counter
- Maintain strong relationships with local farmers and purveyors through respectful sourcing and communication
- Track and manage product yields, shrink, and COGS
- Coordinate with our culinary team for internal orders and menu support
Qualifications:
- Minimum 5 years of experience in whole animal butchery, preferably in a retail or restaurant setting
- Demonstrated experience managing a team
- Strong understanding of meat sourcing, yield management, and food safety
- Food Handlers’ Certification as well as general knowledge of food safety standards & handling requirements in NY State
- Excellent knife skills and a commitment to craftsmanship
- Clear and kind communication style
- Ability to lift 60+ lbs and work on your feet for extended periods of time

Compensation Details
Compensation: Hourly ($26.00 - $28.00) plus tips
