Formento’s is a fast-paced, high-volume restaurant rooted in the warmth and flavor of 1950s Italian-American cuisine. Located in Chicago’s vibrant West Loop, our space features 175 dining room seats, a 50-seat patio, two private dining rooms (serving up to 120 guests), and an adjacent take-away sandwich shop, Nonna’s.
We’re looking for a Sous Chef who is passionate, driven, and thrives in a team-first kitchen. This is a leadership role for someone who understands the rhythm of high-volume service, values consistency and craft, and knows how to grow while helping others do the same.
What we’re looking for:

Solid experience with culinary systems, kitchen organization, and production at scale.

A strong foundation in cooking techniques and kitchen management.

A self-motivated team player who takes initiative but isn’t afraid to ask smart questions.

Someone who can take feedback, adapt, and keep raising the bar—for themselves and the team.
The right fit will:

Lead by example during service, helping set the tone and pace.

Assist in training, mentoring, and motivating line cooks and junior staff.

Be detail-oriented while maintaining the big picture of prep, execution, and guest satisfaction.

Communicate clearly and calmly, even under pressure.
Requirements:

Open availability, including nights, weekends, and holidays.

2+ years of experience in a sous chef or comparable leadership role.

High standards and a commitment to quality and hospitality.

Compensation Details
Compensation: Salary ($50,000.00 - $65,000.00)
