Formento’s is a fast-paced, high-volume restaurant rooted in the warmth and flavor of 1950s Italian-American cuisine. Located in Chicago’s vibrant West Loop, our space features 175 dining room seats, a 50-seat patio, two private dining rooms (serving up to 120 guests), and an adjacent take-away sandwich shop, Nonna’s.

We’re looking for a Sous Chef who is passionate, driven, and thrives in a team-first kitchen. This is a leadership role for someone who understands the rhythm of high-volume service, values consistency and craft, and knows how to grow while helping others do the same.

What we’re looking for:

  • Solid experience with culinary systems, kitchen organization, and production at scale.

  • A strong foundation in cooking techniques and kitchen management.

  • A self-motivated team player who takes initiative but isn’t afraid to ask smart questions.

  • Someone who can take feedback, adapt, and keep raising the bar—for themselves and the team.

The right fit will:

  • Lead by example during service, helping set the tone and pace.

  • Assist in training, mentoring, and motivating line cooks and junior staff.

  • Be detail-oriented while maintaining the big picture of prep, execution, and guest satisfaction.

  • Communicate clearly and calmly, even under pressure.

Requirements:

  • Open availability, including nights, weekends, and holidays.

  • 2+ years of experience in a sous chef or comparable leadership role.

  • High standards and a commitment to quality and hospitality.

Compensation Details

Compensation: Salary ($50,000.00 - $65,000.00)
