As part of a reimagined Top of the Rock experience, the most iconic vantage point of Manhattan now includes The Weather Room Bar and Café. Named after the formerly functioning National Weather Service’s Doppler radar that sits atop the 70th floor of Rockefeller Center, The Weather Room offers distinctly New York food and beverages in the clouds.
All ingredients and prepared foods are sourced from fine purveyors across Rockefeller Center’s campus and throughout the five boroughs. Guests can enjoy espresso drinks, baked goods, counter sandwiches, and snacks while taking in the iconic view of Top of The Rock.
Position Summary
The Kitchen Manager is a vital leader in maintaining The Weather Room’s culinary operations. They are responsible for ensuring consistency and quality in all dishes, driving sanitation practices, and supporting and managing both the back and front-of-house teams. They will play an active role in hiring, training, and developing BOH staff members.
Job Duties & Responsibilities
Leadership & Operations
- Collaborates with the Director of Operations and Director of Culinary to develop operational procedures and culinary strategy.
- Participates in leadership training and staff meetings, representing The Weather Room with a positive and collaborative attitude.
- Supports menu development and sources local, seasonal ingredient options.
- Supports the maintenance of all product recipes and production instructions.
- Maintains responsibility for all preparation for food menu items.
- Is responsible for the execution of all food menu items, including training staff on new preparations.
- Effective communication with management on all processes, procedures, and scheduling via daily/weekly updates as established with the DO.
- Effective communication with hourly BOH staff on processes, procedures, and scheduling via weekly updates using 7Shifts.
- Maintains responsibility and ownership over G7 storage area and enacts systems to maintain organization, cleanliness, and DOH preparedness.
- Effectively communicates and coordinates maintenance and building issues with management.
Business Acumen & Compliance
- Ensures strict adherence to food production and quality standards.
- Manages daily BOH operational systems and maintains updated health and safety documents.
- Enforces sanitation and safety guidelines, and addresses issues arising from inspections or audits in a timely manner.
- Supports company compliance with wage and hour laws and employment requirements.
- Coordinates with the DO and Director of Culinary on staffing, schedules, and cost control.
- Maintains and orders inventory while ensuring product quality.
- Effectively demonstrates project management skills.
Employee Development
- Hires all BOH staff in accordance with Company budget and operational needs.
- Leads, inspires, and trains teams, ensuring adherence to the Weather Room’s values and standards.
- Fosters a culture of development and continuous learning within the team.
- Distributes regular workplace updates and ensures new company initiatives are supported by staff.
- Provides regular coaching, counseling, and evaluations for hourly employees.
- Aids in conflict resolution between team members, using the Company complaint handling procedure.
Work Experience & Education Requirements
- Minimum 3 years’ experience in a high-volume restaurant (1-2 years in a supervisory role preferred).
- Culinary Arts Degree preferred.
- NYC Food Protection Certificate (Food Handler’s) required.
Essential Functions
- Able to lift up to 30lbs.
- Able to communicate effectively in both written and spoken English.
- Polished and professional personal presentation, inclusive of proper hygiene and grooming requirements as outlined in the Employee Handbook.
- Able to work a variable schedule including some nights, weekends, and holidays per the needs of the business.
- Able to walk, stand, carry, and bend for at least 6 hours at a time.
- Demonstrate leadership, ethics, and team development abilities.
- Be adaptable in a fast-paced environment and proficient in various tech systems, including Toast POS and Google Drive.
- Able to work in an environment that may be exposed to hazardous situations and conditions that produce cuts or minor burns.
- Able to be exposed to hot and cold temperatures, such as when working near ovens or retrieving food from freezers.
- Able to work with common kitchen ingredients and potential allergens.
- Able to wear protective and safety attire, such as gloves.
