Chef de Cuisine

Bar Madonna is seeking an experienced Chef de Cuisine to join our team.

The Chef de Cuisine is responsible for the overall culinary direction of the kitchen; including menu development, food preparation, kitchen staff management, and ensuring high culinary standards. The position is full-time and salary-based.

Key Responsibilities:

• Hands-on management and active participation in daily back-of-house and full kitchen operations.
• Ordering and maintaining all food and back-of-house inventory, including receiving and checking the accuracy of orders.
• Taking charge of hiring, training, and termination as necessary to keep the restaurant fully staffed and upholdind high standards.
• Obtain DOH Food Handler Certificate.
• Ensure cleanliness and maintenance of the kitchen and all food service/prep areas in accordance with NYC DOH standards.
• Lead recipe and menu development, and maintain records to ensure quality and consistency.
• Manage restaurant inventory, control purchase/waste, and maintain a food cost on average of 27%.
• Weekly menu development meetings with upper management.
