Job Details
JOB SCOPE:
Responsible for ensuring that supplies and equipment are stocked and ready for service. Assists servers with guest satisfaction in all ways necessary. This job will include Hosting, Other duties as required.
OB FUNCTIONS:
- Clean and reset tables for service according to department manual standard.
- Adhere to Shota grooming/ service standards and policies.
- Ensures all dirty Plates, silver, glasses, etc. go to the dishwasher and are broken down accordingly.
- Replenish all service items; silverware, glassware, China, linen, general supplies, food as needed.
- Ensure proper storage of all service items (see above).
- Ensure that ice, water and juice service is constantly replenished during the service.
- Stock water, olding napkin for the next service period.
- Cleaning window, chairs, door, restroom etc daily.
- Hosting guests to seat.
- Assist servers in serving guests.
- Assist servers in pre bussing tables.
- Serve and replenish water upon guest request.
- Assist other bus persons when needed.
- pay attention to the guests during service , cleaning counter, sushi plate as need during services.
- polish glasses as need.
- washing dishes and glasses when we need.
- Cleaning and mopping floors when need.
Qualifications
QUALIFICATIONS:
ESSENTIAL:
- 6 months to one-year experience as a bus person or kitchen helper that will provide the skills required for this position.
- Fluent in English; excellent verbal and written communication skills
DESIRABLE:
- High school graduate.
KNOWLEDGE, SKILLS, & ABILITIES:
ESSENTIAL:
Self-Efficacy
- Knowledge of American table service.
- Work under minimal supervision.
- Communicate well verbally and in writing.
Other Physical Abilities
- Able to bend, lift, push, pull and carry in excess of 50 pounds.
- Able to walk and stand for long period of time.

- Handle pressure, interact well with people, work quickly and efficiently while remaining motivated and gracious.
Salary Range: $18 - $21 per hour

In the tender embrace of 1997, carrying memories of Fujian, China, I found myself stepping into the vibrant pulse of New York City. My culinary journey began at Hatsuhana, a revered Japanese sushi establishment, where I took my first steps as a sushi chef trainee. It was there that I began to understand the dance of the knife and the delicate art of sushi.
My path led me through the prestigious kitchens of Sushi Seki and Blue Ribbon, eventually bringing me to work alongside Chef Masa & Chef Kevin at ITO Tribeca. Each experience was a lesson, and each day a new verse in my ever-evolving journey with sushi.
In 1999, I stumbled upon a book that would shape my future—Shota No Sushi. It wasn’t just a comic; it was a reflection of my passion, a tale of dedication and an unrelenting desire to perfect an art. As I turned its pages, a thought took root in my heart: if I ever had a restaurant of my own, it would be named ‘Shota’.
Guided by the philosophy of “Never Forget the Original Intention”, I spent the next two decades honing my craft, learning, and growing. Today, that long-cherished dream has become a reality. Shota Omakase, nestled in the heart of Williamsburg, Brooklyn, is more than just a restaurant—it is a piece of my soul, a testament to a journey filled with love, perseverance, and an unwavering pursuit of excellence.
My heart finds solace in traditional Edomae-style sushi, where marination, curing, and aging bring out the soul of each ingredient. At the same time, I embrace modern innovation, allowing creativity to enhance tradition.
