Haymarket is Chef India Doris first solo project following her time at Saga. The result will be a modern European menu in a high-end space, spanning dishes from Spain, Normandy, and London (where she’s from). Rounding out the Haymarket team is business partner Alex Pfaffenbach, formerly the director of development of the hospitality company Quality Branded.
