Position Summary

The Wine Director is responsible for ensuring the excellence, creativity and profitability of the Legacy Rec ords beverage program. The position serves as a leader, educator, coach and mentor to the sommeliers, bartenders and front of house line staff. The position makes service, operations, scheduling and purchasing decisions that impact the financial health of the business and are responsible to do so in a way that is aligned with the culture and policies of DHG. The position combines management of people with staff education, creative input and financial responsibility. This position requires flexibility, knowledge of front of house line positions and strong people management skills.  

Key Relationships

Work with Management and the FOH service team to effectively maintain the Legacy Records standards of service and guest experience. 

Ensure the continued excellence and profitability of the Legacy Records Wine Program.

  • Work with Partners to thoughtfully build upon the Legacy Records  culture and wine program in a way that adds quality and value to the guest experience. Actively participate in service in order to promote, educate and sell wine to guests.
  • Work with the Director of Operations and Director of Finance to ensure that all budgeted cost percentages are met each period. Meet or exceed budget for wine sales and wine COGs.
  • Maintain proper glassware (wine glasses, decanters, half bottle decanters) storage/pars.
  •  Upload to R365 and code all beverage invoices in a timely manner and ensure inventory counts from toast to Binwise are reconciled on a daily basis.
  •  Ordering and maintaining the standards of the Wine Program and performing inventory counts and reconciliation. 
  • Providing suggestions in regards to allocations
  • Ensure accurate, efficient, cost effective and timely ordering of all items related to the wine and beverage program.
  • Ensure that all end-of-period reports, inventories and forecasts are completed accurately and on time, as directed by the Director of Finance.
  • Ensure that all POS systems, inventory systems, beverage lists and any other information related to the wine program remain accurate and up to date. 
  • Establish and foster strong relationships with beverage purveyors in order to ensure that Legacy Records receives the best product and pricing available and maintains a strong reputation as a category leader in the industry.
  • Work with a Private Events Coordinator to drive profitability in the Private Dining Room. 
  • Manage the sommelier schedule in a way that ensures that the business has appropriate coverage to execute the highest level of service and hospitality during each shift, while considering all scheduling needs and costing.

Help maintain and uphold the service & guest experience at Legacy Records while building a high-performance team. 

  • Actively seek opportunities to connect with guests during service periods by being present in the dining room and picking up on cues that will help tailor each guest’s experience to their unique needs.
  • Work to build strong guest relationships and create new regulars.
  • Work with the management team to continually develop knowledge of all front of house service roles and guide line staff in execution of the mechanics of their positions.
  • Design and organize beverage education programs and initiatives that assist the management teams in educating the staff.
  • Lead well-planned and dynamic staff lineups before each shift in order to communicate important details of service and motivate staff to attain the highest level of job performance. 
  • Provide continuous training and leadership to develop and grow all team members.
  • Spend time each day observing and coaching front of house staff members in the technical elements of their jobs, focusing specifically on the bar and wine team.
  • Guide the entire staff in maintaining the cleanliness of the physical workspace.
  • Work with the management team to in opening/closing the restaurant properly and ensure that repairs and maintenance issues are addressed in a timely and effective manner.

Compensation Details

Compensation: Salary ($90,000.00 - $100,000.00)

Chef Ryan Hardy will develop the culinary program with his fresh, flavorful cuisine, gathering inspiration from Italy’s northern coasts – there will be lots of seafood, vegetables, risotto (Ligurian, Venetian, Provence, Mediterranean-inspired).

Built in a neighborhood once ripe with recording tradition and consistent with Delicious Hospitality’s belief that music is the key to the soul, the name Legacy Records seemed to be more than just a former studio, it landed as the name of the restaurant. Located at 517 W. 38th Street, Legacy Records will be open for breakfast, lunch, dinner and private dining beginning Fall 2017.
