Summary of Position: The Sushi Line Cook is responsible primarily to butcher/fillet fish, manage storage and proper handling of fresh sea food, preparation and portioning of food and ingredients. Prepare food items in accordance with production requirements and quality standards while maintaining a safe and sanitary work environment. Assure the highest quality by working in an efficient and conscious manner, as well as maintaining and developing the highest service standards possible.
Responsibilities:
- Cutting, chopping, slicing, and fileting different types of proteins.
- Inspecting the quality of fruits, vegetables, fish, and other foods used to prepare dishes and informing the Executive Chef when quality is sub-standard.
- Preparing various dishes according to established guidelines on quality, portion size, presentation, and food safety.
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before/during/after every use.
- Ensuring that all prep list/checklist and any ordering need is being done every day for consistency purposes.
Required Skills/Qualifications:
- Basic knife skills
- Solid understanding of food preparation and health code standards
- Experience as sushi prep / line cook.
- Excellent culinary skills and knowledge of food productions techniques.
- Thorough knowledge and understanding of kitchen equipment use and operation.
- Familiar with industry’s best practices.

Physical Requirements:
- Must be able to be standing/mobile/stationary for at least 7 hours a day, 35 hours a week.
- Periodically fast paced strides are required to go from one part of property to another.
- Must regularly lift/carry/move 35 pounds of force.
- Must be able to seize, grasp, turn and hold objects with hands.
- Occasionally kneel, bend, crouch and climb are required.
Pay: $20 - $24 per hour plus tips
Schedule: Thursday to Sunday, 9am to 6pm.
