About Us:
Roll Up by Oui Concept is an intimate, design-forward hand roll bar blending Japanese culinary tradition with French aesthetics. Located in Chicago’s South Loop, we offer a highly curated, bar-seating-only experience where freshly prepared hand rolls are served directly by chefs. We’re seeking a General Manager to help us open and lead the restaurant with precision, creativity, and hospitality at the center.
Position Overview:
As General Manager, you will be responsible for all day-to-day operations—from recruiting and team development to inventory, scheduling, and guest satisfaction. You’ll work closely with ownership and set the tone for a high-performing, thoughtful, and professional team.
Key Responsibilities:
- Lead all front and back-of-house operations
- Hire, train, and supervise hourly team members in line with brand standards
- Oversee weekly schedules, payroll coordination, and labor management
- Maintain inventory control and ordering for all food, beverage, and supply needs
- Uphold the highest standards of cleanliness, food safety, and service
- Handle guest feedback and lead service recovery with empathy
- Collaborate with ownership on monthly goals, marketing ideas, and special events
- Prepare for a successful soft opening and ensure ongoing team readiness
- Create a calm, focused work environment that values both discipline and kindness
Required Qualifications:
- 3+ years of restaurant management experience (preferably in Japanese cuisine or fine casual concepts)
- Familiarity with hand rolls, sushi, or omakase-style service strongly preferred
- Solid experience with hiring, scheduling, payroll, and inventory systems
- Ability to lead and develop a small, high-performing team
- Excellent communication, organization, and problem-solving skills
- Must be able to work evenings, weekends, and holidays
- Able to stand for extended periods and lift up to 50 lbs
Required Certifications
- Certified Food Protection Manager (Illinois) – required
- Food Handler Certificate or ServSafe Food Handler – required.
