Job Details
Edith's is hiring a lead Line Cook/Kitchen Manager who is looking to work with a small, dynamic, dedicated team. If you enjoy working in a fast-paced kitchen and sandwiches, then this is the right place for you! This leader must excel at working in a collaborative environment and enjoy time spent working with and coaching the culinary team.

QUALIFICATIONS:

Mandatory Food Handlers Certificate that meets local requirements
Highly developed sense of urgency
2+ years of progressive kitchen management experience
Strong leadership and communication skills
Driven to provide outstanding food and hospitality
Ability to maintain a good handle on food and labor costs
Proficient in high volume egg cookery
Experience with various cooking styles and techniques
Able to stand for long periods of time, lift 50+ pounds, withstand both hot and cold working conditions, etc.
Communication skills - Spanish is a plus/English is mandatory

DUTIES & RESPONSIBILITIES:

Flexibility to work any station in the restaurant, takeout (prep, expo, colds, pasta, deck, slapping, oven and new stations as they are created)
Set the standards for safe work habits and DOH compliance, including but not limited to preparing the kitchen staff for a DOH inspection and managing the staff during inspection
- Expedite 75-100 orders an hour orders on the weekend
- Help meet company objectives in sales, standards, quality, appearance of facility and sanitation and c-- ---- Cleanliness through training of employees and creating a positive, productive working environment.
- Maintain clear and consistent communication to the team. Running a smooth service every day
- Develop hourly staff in all areas of professional development, managing opening and closing checklists, mid-day line checks. Temperature and Cleaning logs
-Enforce the highest quality food standards
-Serve as a mentor to newer members of the culinary team

In Spring 2021, the first standalone brick & mortar store was born nearby in Williamsburg: Edith’s Sandwich Counter.

Open daily for breakfast and lunch, the Sandwich Counter became an instant hit, creating popular and viral hits – such as The BEC&L Sandwich (which The New York Times named as ‘One Of The Sandwiches That Defines New York City’, calling it ‘the platonic ideal of hangover food, with an added latke layer… the bagel chewy, eggs impossibly fluffy, the latke doing that crunchy-outside, creamy-inside thing that will cure what ails you’) and The Iced Cafe Slushie (which the Food & Wine Magazine described as a ‘super refreshing, Brooklyn-viral slushie of tahini, oat milk, and cold brew’ and ‘the best thing I drank this year, just like it was last year).
