Renwick Hospitality Group is seeking a visionary Director of Bars to join its executive team. This leadership role is responsible for overseeing all bar operations, setting standards, and driving innovation across the organization. As a key figure within Renwick Hospitality Group, the Director of Bars will inspire and guide teams while fostering strong partnerships with leadership at all locations to enhance the overall guest experience.
Key Responsibilities
Recipe Management & Standardization
- Reorganize all prep recipes, converting measurements to grams for precision.
- Catalog former and current recipes per property, ensuring consistency across all bars.
- Maintain updated recipe standards in Bevager, deactivating outdated items and aligning all beverages with Renwick standards.
Training & Staff Development
- Develop a structured training program to build technical skills across all bar teams.
- Conduct monthly bar meetings featuring industry partner training and skill development sessions.
- Train floor staff on service execution, ensuring seamless integration of beverage offerings into overall guest experience.
Operational Oversight & Performance Optimization
- Conduct bi-weekly walkthroughs for all property bars, inspecting fridges, storage, back bars, and overall organization.
- Work on-site shifts to directly oversee bar performance and ensure proper execution within service flow.
- Provide support for shift coverage during leadership absences to maintain operational continuity.
Inventory Management & Cost Control
- Review and approve all orders at designated sites, ensuring purchasing efficiency and cost control.
- Standardize inventory tracking across properties, implementing Sunday counts, recounts, and review processes.
- Optimize pricing and reduce costs through weekly inventory checks, testing, and cost reviews of cocktails and spirits.
Menu Development & Beverage Innovation
- Collaborate with teams to develop bar menus that align with Renwick standards, incorporating seasonal and guest-driven selections.
- Ensure team inclusion in menu development, offering growth opportunities and fostering creativity among bar staff.
- Organize all cocktail recipes into a structured catalog system with leadership input.
Financial Performance & Brand Partnerships
- Oversee financial goals for bar operations, ensuring revenue expectations are met across all venues.
- Develop brand partnerships to enhance consistency and elevate guest experiences through strategic collaborations.
