About the restaurant: Housed in the old Checker Taxi building, El Che Bar is Chef John Manion’s spirited Argentine-American restaurant, a love letter to his time traveling throughout the country. In a warm and eclectic setting, the restaurant evokes the contemporary rhythms of Buenos Aires filtered through a Chicago lens. Locally sourced vegetables, grilled meats, and seafood is showcased on custom-built grills and chapas in an open hearth, while the bar and wine programs frame classic styles and appellations in a creatively contemporary and natural approach. El Che Bar is located at 845 W. Washington Blvd.

El Che Bar is a Latin-local restaurant whose heart is the hearth. It will feature Argentine-inspired Midwestern cuisine in a casual, urban nomadic setting in the West Loop.
Every item on the menu is touched by fire, from prime cuts of locally sourced meats to a robust selection of seasonal vegetables. Preparations are elemental and unfussy—smoked, seared, roasted or grilled. Vegetables are served charred, skin-on; adornments quietly nod to South America without losing sight of the Midwest.. Our beverage program emphasizes esoteric wines, artisanal draft beers, and an ambitious cocktail program featuring South and Central American Spirits.
The setting is casual and warm, luxurious yet rough-hewn. Worn walls, colonial pastels, dusty leather, and traditional patterns are juxtaposed with contemporary elements (metals, marble). Our open kitchen imparts a steady hum. Lighting is low; the soundtrack is mysterious but fleetingly familiar.
