Pastry Prep Cook – Sweet & Savory Focus
Location: Laurel Bakery – Brooklyn, NY
About Laurel Bakery:
Laurel Bakery is part of Redwood Hospitality, the team behind Michelin-starred Oxalis, Place des Fêtes, and Café Mado. Our bakery blends artisanal tradition with modern creativity, serving a range of viennoiserie, seasonal pastries, and savory baked goods. We’re a neighborhood-facing production space that supports both retail and our broader hospitality group, with a commitment to quality, community, and care.
About the Role:
We’re seeking a skilled and motivated Pastry Prep team member with a well-rounded background in both sweet and savory pastry production. This is a great fit for someone with culinary or pastry training, prior professional kitchen experience, or strong self-taught skills, who is looking to work with a tight-knit team dedicated to excellence and growth.
This position is hands-on and collaborative, contributing to our daily viennoiserie and pastry prep while also supporting a variety of savory items such as laminated tarts, hand pies, quiches, and other seasonal savory bakes.
Key Responsibilities:
-
Prep and produce a range of baked goods, including sweet viennoiserie, seasonal pastries, and savory items (e.g., galettes, filled croissants, laminated savory pastries, quiches, etc.).
-
Scale, mix, shape, bake, and finish pastries with consistency and care.
-
Follow recipes accurately while working cleanly and efficiently.
-
Assist with both sweet and savory prep tasks according to the daily production schedule.
-
Work collaboratively with the pastry team to meet production goals.
-
Maintain a clean and organized work area, ensuring proper handling of equipment and ingredients.
-
Participate in the continued refinement of recipes and systems as needed.
Ideal Candidate:
-
Has some hands-on pastry or kitchen experience—culinary/pastry school, bakery/café work, or self-taught with proven skills.
-
Comfortable with both sweet and savory pastry prep, including lamination, custards, and savory fillings.
-
Has a strong sense of timing, attention to detail, and a clean, organized working style.
-
Enjoys learning and improving techniques in a fast-paced, high-standard environment.
-
Is reliable, communicative, and a team player.
-
Can lift 50+ lbs and stand for extended periods.
-
Interested in being part of a growing, thoughtful bakery team with opportunities for advancement.
What We Offer:
-
A chance to work in a bakery that values craft, seasonality, and collaboration.
-
Mentorship and guidance from a professional team committed to growth.
-
Exposure to a wide variety of techniques and ingredients, from viennoiserie to savory tart doughs and fillings.
-
A respectful and inclusive workplace where your contributions are recognized.
-
Opportunities to grow within the bakery or across Redwood Hospitality’s wider family of restaurants and cafes.
Laurel Bakery is an equal opportunity employer. We are committed to building a team that reflects a diversity of backgrounds, perspectives, and experiences.
