Who We Are
Experienced restaurant operators with locations in Manhattan are partnering with a local family of entrepreneurs to build, from scratch, a brand-new destination restaurant with a state-of-the-art kitchen, located in a prime and historic part of Pawling.
Who We’re Looking For
We are looking for an experienced restaurant professional to join our opening team as Chef de Cuisine. The right person for this job has a passion for cooking and hospitality, is looking for a new and exciting opportunity outside of NYC, and is up for the challenge of delivering an incredible experience for those visiting from near and far. Responsibilities and Expectations
- Ensure Food & Beverage standards are maintained
- Ensure the consistency in the preparation of all food items by colleagues for a la carte and/or buffet menus according to property recipes and standards
- Ensure that hygiene and safety protocols are implemented and enforced to the highest standard including upholding FIFO guidelines and maintaining appropriate procedures for labeling/open date, protein handling, and cooling/reheating logs
- Communicate effectively with the rest of the team
- Strategize on new products and service offerings while creating unforgettable experiences for our guests
- Manage time for all back of house employees by overseeing breaks and managing labor cuts; assist with labor scheduling as needed
- Active floor management and order expediting to drive outstanding service results
- Ensure all colleagues are trained and held accountable for brand standards,
- Ensure prep is completed properly and to company standards, including making par adjustments, completing quality control checks and making recipe adjustments when necessary
- Consistently have a presence with colleagues
- Take responsibility to uphold the cleanliness, maintenance and storage procedures
- Execute opening and closing checklists
- Review reports to be current with VIPs and special groups, communicate special requirements and monitor execution
Required Experience
- A good attitude!
- Previous experience in a culinary management/supervisory role
- Ability to work well under pressure in a fast-paced environment
- Ability to work cohesively and collectively as part of a team
- Must be able to convey information and ideas clearly
- Must be able to evaluate and select among alternative courses of action quickly and accurately
- Must maintain composure and objectivity under pressure
- Must be effective in handling problems in the workplace including anticipating, preventing, Identifying and solving problems as necessary
- Excellent food and beverage knowledge
- Strong understanding and implementation of HACCP
- Excellent verbal & written communication
- Ability and willingness to learn
Physical Abilities:
- Move, lift, carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance, and frequently lift and bend from the waist
- Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity in both daytime and nighttime lighting
- Stand, sit, or walk for an extended period of time or for an entire work shift and perform repetitive motions
- Reach overhead and below the knees, including bending, twisting, pulling, and stooping
- Requires manual ability to use, carry, and operate all necessary equipment
