This opening will mark the resurgence of luxury nightlife experiences in New York with dynamic food and beverage venues and programming that will make Faena the ultimate destination for the sophisticated traveler to New York.
JOB OVERVIEW
The Pastry Chef leads the pastry team in creating an exceptional and innovative pastry program that reflects Faena’s luxury dining experience. This role is responsible for menu development, team leadership, and maintaining the highest culinary standards in pastry production.
The ideal candidate is an expert in classical and modern pastry techniques, has a deep understanding of flavors, textures, and aesthetics, and thrives in a high-energy fine dining environment.
DUTIES AND RESPONSIBILITIES
- Conceptualize and develop an exceptional pastry and dessert menu that aligns with Faena’s culinary vision.
- Lead, train, and mentor the pastry team, ensuring skill development and operational efficiency.
- Oversee daily production of breads, pastries, plated desserts, confections, and specialty baked goods.
- Work closely with the Executive Chef and Sommelier to design seasonal pairings and specialty menus.
- Maintain a strong working knowledge of classic French, Italian, and modern pastry techniques.
- Implement and maintain quality control standards across all pastry items.
- Oversee ingredient sourcing, cost control, and inventory management.
- Ensure compliance with health, safety, and sanitation regulations in all pastry operations.
QUALIFICATIONS DESIRED
- Minimum 5+ years of experience as a Pastry Chef in a luxury hotel, or fine dining setting.
- Formal pastry arts education from a culinary school preferred.
- Proven experience leading and developing a pastry team.
- Strong inventory and cost management skills for pastry production.
- Experience with VIP clientele and high-profile private events preferred.
- Ability to work a flexible schedule, including evenings, weekends, and holidays.
SKILLS
- Mastery of laminated doughs, sugar and chocolate work, artisanal breads, and plated desserts.
- Advanced knowledge of molecular gastronomy and modern pastry techniques.
- Creative vision for menu innovation and presentation artistry.
- Exceptional leadership and training skills to manage and inspire the pastry team.
- Ability to thrive in a fast-paced, high-volume luxury dining environment.
PHYSICAL DEMANDS AND WORK ENVIRONMENT
- Endure various physical movements throughout the work areas
- Ability to move safely in uneven terrain or in confined spaces
- Remain active, constantly moving, or prolonged periods sitting at a desk and working on a computer throughout work shift or prolonged standing for a period
- Medium Work: Exerting up to 40 pounds of force occasionally, and/or 20 pounds of force frequently, and/or up to 10 pounds of constantly moving objects, may occasionally lift and/or move up to 25 pounds.
Compensation Details
Compensation: Salary ($130,000.00 - $145,000.00)
