SOUS CHEF AT A NEW CHINESE WINE BAR IN CHINATOWN 65K
Opening Summer 2025
Lei is a new, small and focused, Chinese Cuisine-driven wine bar set to open in Chinatown this summer. As we gear up for our opening, we are looking for a talented, enthusiastic, and motivated Sous Chef to join our culinary team.
RESPONSIBILITIES
- Work closely with the Chef to oversee the daily operations of the kitchen, ensuring the highest standards of food quality, safety and recipe accuracy
- Collaborate closely with FOH team to ensure smooth communication between the kitchen and FOH, particularly with dietary/allergy requests
- Manage inventory and ordering processes to ensure an adequate stock of ingredients, equipment and supplies
- Uphold high quality standards by being able to lead line-level cooks to closely follow recipes and cooking techniques of the menu
- Work in tangent with the Chef to develop new menu items and recipes.
- Ensure that all facets of kitchen operations comply with health and safety standards, including cleanliness, sanitation, and food safety protocols
- Assist with the training and development of kitchen staff, ensuring they have the skills to execute the menu to its full potential
- Manage and monitor daily production, inventory and par levels to effectively minimize food waste. Maintain a food cost margin of 25%
- Experience in Chinese cooking is not necessary but an interest and openness to learn is
QUALIFICATIONS
- Proven experience as a Sous Chef or in a similar culinary leadership role
- Strong leadership and communication skills with the ability to motivate and manage a diverse team
- Knowledge of food management practices, including inventory control, cost management, quality control and a keen eye for detail in food presentation
- Culinary skills with a passion for high-quality food preparation
- Excellent organizational skills and the ability to multitask under pressure
- New York City Food Handler's Certification
