Experience - Previous experience as a Beverage Director in a quality restaurant. (Michelin Starred experience preferred).
JKS Restaurants are seeking a Beverage Director to lead on a new restaurant opening in 2025.The successful candidate will be personable, passionate, and possess exceptional experience in the fine dining space.

The Role
The Beverage Director is responsible for providing strategic leadership and operational oversight across multiple restaurant sites' beverage programs, ensuring exceptional drink quality, financial performance, and brand standards. This role involves developing and implementing beverage strategies, maintaining operational excellence, and driving innovation while nurturing talent and maintaining the company's reputation for beverage excellence.

STRATEGIC LEADERSHIP
- Develop and execute the overarching beverage strategy across all sites, ensuring brand consistency and innovation
- Oversee beverage programmes performance, ensuring excellence in product quality, service standards, and profitability
- Optimise processes by improving efficiency, driving innovation, and leveraging technology to align with business goals
LEADERSHIP & PEOPLE DEVELOPMENT
- Provide mentorship and expert guidance to Wine leads, Head of Bars and Restaurant Directors to elevate all beverage standards.
- Collaborate with senior leadership and key stakeholders to enhance wine and beverage knowledge, service quality, and product innovation.
- Influence and inspire teams by sharing industry expertise, best practices, and emerging trends.
- Support training initiatives, ensuring teams are equipped with the skills to uphold the company’s wine and beverage philosophy.
- Foster a culture of learning and development, ensuring wine and beverage excellence is continuously improved across sites.
- Support and oversee site management in recruiting, sourcing and onboarding wine and beverage team members, making full use of the applicant tracking systems.
- Liaise regularly with front of house management and directors about departmental performance and report issues in a timely manner. Develop senior beverage team in doing so.
FINANCIAL & COMMERCIAL
- Own and manage the beverage P&L, ensuring revenue and cost targets are met
- Develop and optimize budgets, balancing quality with financial efficiency
- Identify and implement revenue growth opportunities while maintaining guest experience and operational standards
- Negotiate supplier agreements, rebates, and contracts to optimize commercial performance
- Lead the beverage sponsorship strategy, securing partnerships and funding to support marketing initiatives and promotional activations
- Oversee financial performance metrics, including sales trends, margins, and operational efficiencies
- Effective communication with sales and marketing so no opportunities to promote our spaces and beverage programs are missed
