Mister Mao is a tropical roadhouse on Tchoupitoulas Street.

The back of house team is seeking a high energy, highly motivated SOUS CHEF. Mister Mao has an open kitchen concept with a chef's counter that is handled by the BOH. This means that all employees must be ready to provide excellent hospitality to guests with a professional presentation. We seek applicants that are serious about working in the industry and strive to attain a well rounded understanding of restaurant operations.

Ideal applicants will be able to fill full time positions (five nights per week). Applicants must be friendly, accommodating and available to work a varied schedule, including days, nights, weekends and holidays. Experience within other professional, and high volume dining establishments required.

Fully covered health insurance is available for this position.

Position Summary: Applicant is responsible for supervising the daily activities of the kitchen.  The position requires strong leadership ability to train and supervise staff.  We are looking for an applicant that interacts with fellow employees and supervisors in a professional, welcoming manner to ensure effective communication.  We are looking for an applicant that takes pride in their personal presentation and is able to provide excellent hospitality towards guests.
 
Duties and Responsibilities: including but not limited to
 
·       Maintain professional appearance standards 
·       Ensures the needs of the guests at the chef's counter are accommodated
·       Ensures the general cleanliness of the kitchen, and the entire restaurant
·       Participate in interviewing, hiring, and training new applicants 
·       Responsible for the scheduling of kitchen employees
·       Ensures safety, quality and recipe accuracy
·       Manage the execution of regular service, catering, take-out, and offsites
·       Contribute to seasonal menu development and weekly rotating selections
·       Ensures Department of Health and company sanitation standards.
·       Ensures that the venue is compliant with laws, regulations, and policies
·       Coaches kitchen to have a rounded understanding of restaurant operations
·       Instills proper food handling techiniques and efficient work ethic to staff
·       Responsible for all mechanical systems being in good working order
·       Responsible for checking cover counts, BEOs, nightly logs
·       Preparation and delivery of menu-focus items to daily pre-service meetings
·       Maintains cost of goods information in spreadsheets
·       Possesses knowledge of all recipes and maintains recipe books
·       Ensures the completion of all opening and closing procedures
·       Ensures expediting standards
·       Ensures proper timing for all areas of the restaurant
·       Attends, leads and participates in any departmental meetings or trainings
·       Portrays a positive and professional attitude.
·       Demonstrates knowledge of venue and its partners
 
 
Qualifications:
·       Minimum 2-3 years previous culinary management experience within a high-volume kitchen setting is essential
·       Some front of house experience a plus
·       Ability to speak spanish a plus
·       Responsible Vendor's Permit is required
·       Must be available to work days, nights, weekends, and holidays
·       Proficient with computers, POS, and technology
·       Previous experience with control food and labor cost, demonstration cooking, and menu development preferred
