Manager – Hellbender
The Manager will be responsible for supporting the General Manager and managing the FOH teams to ensure they deliver excellent service and hospitality. This consists of, but is not limited to, ensuring the dining room & bar are set up for service, staffing appropriately, guiding guests through a quality dining experience, helping to manage the beverage program, cocktail development, and inventory. The Manager will also uphold Hellbender culture by achieving service excellence, financial success, compliance with company policies, and team safety and well-being.

Direct Reports: Servers, Bartenders, Bar Backs, Hosts, and Runners
Key Relationships: FOH and BOH Management, FOH teams

Responsibilities:
Operations
- Opens and/or closes the restaurant per Hellbender standards
- Manages all FOH teams in their daily responsibilities and provides clear, effective direction
- Performs all POS functions, including comps, voids and transfers
- Ensures the Hellbender dining room is set up for success and side work is continually being monitored and completed.
- Ensures Hellbender steps of service are met for every guest
- Guides guests through the food and beverage menus, and assists with wine service
- Functions as Hellbender primary liquor and beer buyer.
- Manages spec sheets, sidework, bar maintenance, recipe development and testing
- Responsible for managing the costs associated with the liquor, beer, & cocktail programs
Menu Knowledge
- Keeps current with Hellbender food menu and can describe all dishes and style of service in a clear, consistent fashion
- Maintains ongoingworking knowledge of Hellbender wine list, liquor selection, cocktail offerings and beverage menu
- Understands different types of allergy restrictions and is able to guide guests through the menu seamlessly, knowing what can be substituted and changed to accommodate the guest’s requests
- Learns and understands the cooking techniques and processes used in the Hellbender kitchen
Compliance
- Actively strives to ensure that Hellbender remains compliant with all local, state and federal employment laws and Department of Health standards
- Supports the onboarding process to ensure the completion and compliance of all related documentation
People Practices
- Builds and maintains a high-performance team, involved in recruiting, interviewing and hiring
- Remains constantly up to date and compliant with Hellbender HR practices and company policies
- Writes and posts accurate FOH schedules, and resolves staffing issues with callouts and replacements
- Acts as a role model and provides continuous constructive feedback and guidance to FOH team; continuously coaches team and creates opportunities for improvement
- Fairly and consistently executes progressive disciplinary action with FOH team members when necessary and in compliance with Hellbender HR practices
Communication
- Actively cultivates and maintains strong, caring relationships with guests, vendors, and neighboring businesses
- Along with partners, regularly communicates relevant Hellbender news and initiatives with the FOH team
Training
- Ensures FOH team is completely trained and knowledgeable in all aspects of service
- Holds FOH team accountable for effectively completing their position’s specific job responsibilities according to Hellbender standards
- Educates FOH team on all aspects of food and beverage, daily and through continuing education
- Communicates daily menu changes to the FOH team
Cash Responsibility
- Strictly follows general business guidelinesfor cash handling
- Carefully detects counterfeittender with provided materials
- Properly rings in all drink and food items ordered by guests
- Accurately manages tip pool entry as directed by Hellbender procedure
Qualifications:
1+ years of restaurant management experience in an upscale restaurant
Fluent in in both written and spoken English
Excellent verbal and written communication skills
Proficient with POS Systems, Microsoft Office Suite (Excel, Word, Outlook, Power Point)
Demonstrates leadership characteristics, which inspire team members to meet and exceed standards
Approaches projects with multi-tasking, problem solving, attention to detail, critical thinking and receiving delegation
Takes initiative and follows through
Ability to work nights, weekends and holidays, and variable schedule per the needs of the business
Education:
Preferred Bachelor’s Degree or Certification in Hospitality-related field or equivalent expertise gained on the job
Holds NY Department of Health & Mental Hygiene Food Protection Certificate
Physical:
Ability to stand for extended periods of time
Ability to bend/climb stairs as necessary
Ability to lift/push 50+ lbs.
Meets grooming standards as outlined by employee guidelines
Ability to perform essential job responsibilities and maintain professionalism under pressure
Attends mandatory meetings, including team meetings, leadership meetings, etc.
