Executive Sous Chef for Italian Trattoria 
Position Summary:

We are seeking a passionate, skilled, and highly organized Executive Sous Chef to help lead the kitchen of our authentic Italian trattoria. This role supports the Executive Chef in daily operations and plays a key part in menu development, team management, and maintaining standards. 

The ideal candidate has a deep respect for Italian culinary traditions, a hands-on leadership style, and the ability to thrive in a fast-paced, high-volume environment while upholding the spirit and hospitality of a true trattoria.

Key Responsibilities:
  • Assist the Executive Chef in all aspects of kitchen operations, including service execution, prep, and production

  • Maintain the highest standards of food quality, safety, sanitation, and presentation

  • Supervise, train, and mentor kitchen staff; lead by example in technique, timing, and professionalism

  • Collaborate with the Executive Chef on menu development

  • Maintain inventory control, food cost management, and waste reduction

  • Oversee and ensure the proper execution of all recipes, portioning, and plate presentations

  • Participate in hiring, onboarding, and scheduling of BOH team

  • Enforce kitchen discipline and uphold a clean, organized, and respectful work environment

  • Monitor and troubleshoot kitchen equipment maintenance needs

  • Uphold all health code and sanitation regulations in accordance with local laws and internal standards

  • Lead line during service; act as expeditor when needed to ensure smooth flow and quality control

Qualifications & Skills:
  • 3+ years in a sous chef or senior kitchen leadership role, preferably in an Italian or Mediterranean concept

  • Strong knowledge of regional Italian cuisine, ingredients, and traditional cooking techniques

  • Excellent leadership and team-building skills; able to train and motivate staff

  • Experience with menu planning,  inventory management, and supplier relationships

  • ServSafe certified or equivalent (or ability to obtain)

  • Strong organizational skills with the ability to multi-task and remain calm under pressure

  • A genuine passion for food, hospitality, and guest experience

  • Ability to work flexible hours including nights, weekends, and holidays
